IMG_2668This weeks Simple Meal Sunday ‘Beef Basil’ recipe is from one of my favourite Thermomix food bloggers, Tenina, over at tenina.com. I had never seen a recipe done in the Thermomix like this before, it seemed way too simple and I kind of expected the beef to be a little chewy… but I learnt to never ever doubt Teninas’ amazing skills ever again. ever! This meal was cooked in under 10 minutes, and I made a few adaptations based on what I had in the house:

  • I used 1/2 tbsp chicken stock concentrate instead of chicken stock powder
  • I used coconut sugar, but you could omit the sugar all together for low carb
  • I used chicken breast instead of beef fillet in a second lot as a tester, for those who prefer chicken
  • I used all coconut aminos/soy sauce instead of fish sauce/oyster sauce for those who cant have seafood/shellfish

I highly recommend you guys give this recipe a go, I still cant get over how quick, easy and delicious it was.

Bellini Adaptations:

  • Use blunt blade for this recipe.
  • At step 2 & 3 use 120-130 degrees if using a Supercook and ST temp if using an Intelli.

  2. We eat this regularly and is really yum. Tonight However i tried it with chicken but it seemed to shed the chicken. Did this happen to yours? I used breast and turned down the speed. It was still yum though 😊

  3. I made this tonight and had it over skinnymixers thai basil jasmine rice. Wow it was fantastic, very tasty and with very similar ingredients they both complimented eachother. I wish that there was more!

  5. Had this for dinner tonight. What an awesome quick delicious meal! The whole family loved it. I was a bit dubious as I don’t really like basil or beef but Thai basil is much more delicate in flavour and the beef was so tender from the marinade. Definitely be making this again.

  7. Eating this for lunch as I type the comment. Can’t believe the meat is so tender and has so much flavor with such little time and effort required. I used scotch fillet, will definitely be making this regularly from now on.

  10. I cooked this up in like 20 minutes after work (only marinated for 15) then flew out the door to yoga. Got home and before I’d even shut the door hubby and 10yo son said ‘that’s the best thing you’ve ever cooked in thermie’. Stoked!

    I cheated and didn’t cook in thermie cos I was too scared the beef would go tough but me, ms16 and master 13 (who hates stir fry) really enjoyed it
