Ingredients

Wet Paste:-

  • 3 tbsp ground coriander
  • 1 tsp ground cumin
  • 1-7 small red dried chillis - adjust based on spice preference, I used 3
  • 1.5 tsp dried turmeric
  • 3 cloves garlic - peeled
  • 3 tsp onion powder
  • 2 tbsp Malaysian Meat Curry Powder - see Notes

Curry:-

  • 40 g olive oil
  • 1 star anise
  • 1 cinnamon stick
  • 400 ml coconut milk
  • 50 g water
  • 500 g chicken breast - *large* chunks
  • 500 g sweet potato - peeled, medium dice
  • 1 tbsp salt
  • 1 tsp coconut sugar - or brown sugar/rapadura/white sugar

Instructions

  • Blend the wet paste ingredients; work your way up to 1 min/speed 9/MC on.
  • Scrape mixer bowl down.
  • Add 80 g or 2.8 oz of coconut milk, olive oil, star anise and cinnamon stick.
  • Cook 3 min/100°C or 212°F/speed soft/reverse/MC on.
  • Add chicken pieces, sweet potato, remaining coconut milk, water, salt and sugar.
  • Cook 18 min/100°C or 212°F/speed soft/reverse/MC off.
  • Let curry stand for 5 min before serving with rice or use cauli rice for a paleo version!

Notes

The curry powder that I like to use is called ‘meat curry powder’ by Babas. You can find it in most good Asian/Indian grocers:-
Bellini Users
Use blunt blade for this recipe.
At step 4 use speed 1
At step 6 use speed 1 and increase cooking time if sweet potato isn't tender at the end of this step.

    Delicious curry. Made with 2 tins of Jackfruit drained and rinsed instead of Chicken for plant based diet. Turned out beautifully.

  2. This is delicious. Three kids all demolished it which is a rarity here! I swapped the sweet potato for carrot and cauliflower and cooked the veg first for an extra 3 minute and they still had a little crunch. Will be a new favorite for sure!

  4. Made this for the 1st time last night. Absolutely delicious. Omitted chillies and used the 2 Tablespoons of meat curry powder. But still to spicy for my 6 year old. Not that I minded as more for us. Used coconut cream as didn’t have coconut milk. Replaced the Sweet potato with Cauliflower for LCHF. Yum yum yum. Looking forward to the leftovers tonight.   5. I think this is now my favorite curry. I love the flavour
    I use white potatoes and carrots and cook a few minutes before adding the chicken.
    beautiful flavour

  6. Cooked a double batch in the slow cooker using chicken thigh cutlets chopped in chunks. The bone in the chicken in the slow cooker gives awesome depth and nutrition. My 4 yr old said “this is the best dinner ever!” Both her and the 6y old had second! A really yum curry and so easy to make! Thanks Nik! Xx

  7. This curry was delicious! Smelt amazing and tasted just as good. Added carrot and a couple white potatoes, with pumpkin and the sweet potato to thicken the sauce. Will definately make again.

  10. I made this curry tonight! I was septic as no one here liked the Butter Chicken….. But this was an absolute winner! Licked plates! Amazing! My sauce was quite runny – so I’ll reduce water next time. Yes – there will be a next time!

  11. Love this curry it’s my favourite . I don’t use all the chilli in it but follow the recipe and it’s so yummy and delicious . It’s even better the next day you eat it .   12. Easy to make and Loved that I had most of the ingredients beforehand. Omitted the chilli to make it child-friendly and served it with cauliflower rice. Definitely a great, simple weekday meal for us.

  13. This is simple and really delicious. I only had large dried chillies so used 4 without deseeding them. Also didn’t have enough sweet potato so topped it up with potato. Kids are fughting over the left overs and I plan to spirit them away fir my breakfast tomorrow!
