skinnymixer's Chicken Zoodle Soup

Chicken Zoodle Soup is one of my favourite Changing Habits/HCG Protocol healthy Thermomix recipes because its so filling, quick and yummy to make. This Chicken Soup made in the Thermomix TM5  tastes like what I remember 2 minute noodles to taste like, minus the MSG.

You don’t have to be on the protocol to enjoy this dish either, and I have provided instructions in the notes on how to use fresh ingredients and boost the fat content for those who aren’t concerned with keeping their calories down.

Ingredients

  • 400 g chicken breast - thinly sliced
  • 400 g zucchini - zoodles or chunks or strips
  • 2 tbsp chicken stock concentrate + 1200 g | 42 oz water - or 1200 g | 42 oz liquid chicken stock
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • pinch cracked pepper
  • pinch cayenne pepper
  • salt to taste
  • handful of chopped flat leaf parsley or baby spinach

Instructions

  • Add 1,200 g or 42 oz water, stock concentrate, onion powder, garlic powder, cracked pepper & cayenne to mixer bowl. Set it to 10 min/steaming temp/speed 2/MC on. While cooking, you have time cut up your chicken and put it into the simmering basket and prepare your zucchini and put it into the deep steaming tray.
  • Insert your simmering basket into the hot soup, and with a spoon carefully move the chicken around to ensure its not stuck together. Cook for 3-5 min/steaming temp/speed 2 with the steaming tray (zucchini) in place.
  • Portion out chicken, zoodles and chopped parsley and pour broth over the top.

Notes

If you would prefer to use onion, garlic and oil/butter:
Add 1 halved onion and 1 peeled garlic clove to the mixer bowl, chop for 5 sec/speed 6/MC on. Scrape bowl down. Add 30 g or 1 oz oil/butter and cook for 5 min/100°C or 212°F/speed 1/MC off and proceed with step 1 as per the recipe.
Bellini Users
Use the blunt blade for this recipe.
Use speed 3 at step 1 and 2.
At step 2 place tea towel over steamer lid if using an Intelli and extend cooking time if necessary.
If using onion, garlic and oil/butter please increase cooking time if necessary.

  2. I can’t believe this recipe doesn’t have more comments! It is absolutely delicious, whether on the protocol or not. I am doing LCHF and have been knocked down by a heavy chesty cold and have no appetite or desire to cook. I was looking for a tasty yet simple chicken soup. This is very simple but definitely amazing! My partner and kids actually ate most of it – they all were raving about it and even while it was cooking they were commenting on what a lovely aroma was coming from the kitchen.   3. I just made this for lunches for the week – first week of HCG. I didn’t include the spinach/parsley as my containers were full!!! We kept a bit to the side to taste & it’s delicious, thank you!!
    This worked out to 521 calories as a whole dish (or approx 131 calories per serve) according to my calorie counter.

  4. I just tried making this but my stock seperated from the water & it was all cloudy. Im sure i made the stock correctly. Any ideas?

  7. With your recipes on the web there is no nutricial information I.e., calories, carbs, etc like there is in your hard copy books. I’m doing 5.2 and would love the break down of zoodle, chicken soup. Please

    1. I’d suggest you input the recipe into a calorie app (like MyFitnessPal) or search on there for the recipe in case someone else has. It’s likely that Nik doesn’t have the time to do it for you, since she has spent all this time developing a free recipe for your enjoyment. Maybe take some initiative?

  8. I have been sick so made this after a couple of days not eating. Changed the water to bone broth. I sat down to eat my bowl when my 18 month old decides he wants some….. He finished two adult size bowls and shouted “yummy” numerous times and “more” after the first bowl finished. Thanks for a super awesome, super relish recipe. 😍😍😍😇😇😇

  11. I just made this for lunch. Initially I thought it was going to be a little bland but I must say I was pleasantly surprised and enjoyed the nice kick from the cayenne. I also added flat leaf parsley and it was very nice. Thank you for another great recipe Nik.

  12. Made this last night – really happy with it. Husband loved it and I used my new spiral maker. Was so tasty and we had it for dinner last night after a larger than normal lunch was exactly the right dish to have. Another success and winner here

  13. Love this! Worked out four serves around 188 calories each and filling (well for my lunch anyway lol) very tasty and so easy to make and portion out. Thank you, it’s so nice to find a decent low calorie dish.

  15. The broth was lovely but the addition of parsley meant that my kids (2 and 3 yrs) who normally eat anything wouldn’t finish it.
    Didnt taste anything like 2 minute noodles though.

  16. Great, thanks for the recipe, now on Day 40 phase 2 so was looking for something different. I was a little heavy handed with the Cayenne pepper but enjoyed it despite my lips burning. Will definitely use this again.

    1. 400g of chicken would be 4 serves for people following the hcg protocol, but would probably be for 2-3 regular serves 🙂
