The skinnymixer’s Chunky Bolognese has been a popular recipe on the Thermomix Recipe Community for a few years now, and has some fantastic 5 star reviews. Recently I asked the community who felt like they were not using their Thermomix or Bellini as much as they thought they should be, nearly 3,000 people responded…

and so I launched a new initiative called Simple Meal Sunday, to inspire and encourage people to use their machines more. This spaghetti recipe is fantastic because its simple, healthy and budget friendly. It can also be reinvented into so many different kinds of meals, from Chilli Con Carne (using my Mexican Spice Mix), to Shepherds Pie (using my Silky Sweet Potato Mash) to name a few.

I have included both the low calorie/quick version which is HCG compliant and a version using fresh ingredients.

Ingredients

  • 1 tsp onion powder - or 1 medium brown onion, peeled and halved.
  • 1 tsp garlic powder - or 1 garlic clove peeled
  • 20 g olive oil - omit for quick version
  • 700 g tomato sugo/passata - from the supermarket
  • 50 g tomato paste
  • 30 g water
  • 20 g worcestershire sauce - optional, omit for p2
  • 1 tbsp stock concentrate
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/8 tsp cinnamon
  • 1/2 tsp dried chilli flakes - (optional)
  • pinch cracked black pepper
  • 700 g beef mince

Instructions

Quick & Low Calorie Bolognese

  • Add all ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on. or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Fresh Ingredient Bolognese

  • Add your onion and garlic to the mixer bowl, chop for 3 sec/speed 9/MC on. Scrape bowl down.
  • Add olive oil to mixer bowl and cook for 5 min/100°C or 212°F/speed 2/MC off.
  • Add remaining ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Notes

This makes a large serve of bolognese, which will comfortably serve 6.
Smaller serve: You can halve this recipe by halving all of the ingredients and reducing the cooking time by about 3 minutes.
You can use chicken, pork or lamb mince as well.

Quick & Low Calorie Bolognese
Use blunt blade for this recipe.
At step 2 & step 3 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.
Fresh Ingredient Bolognese
Use blunt blade for this recipe.
At step 2 increase cooking time if needed.
At step 4 & 5 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.

    This spag bol is delicous and it tastes the same each time I make it (probably because I never add extra ingredients). I have made this so many times now that I know it off by heart. Makes the best lasanga too with your cauliflower cabonara sauce turned into a beschmal sauce.

    1. Thank you for the lasagne tip! I also add extra ingredients. Carrot and celery today as I only had 500g turkey mince so that made up to 700g but I added the veggies at the first step 😊

  2. Delicious!! When I first got my thermie I made bolognese from the BCB, we hated the consistency and it really lacked flavour. So I was hesitant in trying this recipe, it was so great!! I really loved the hint of chilli in it too.

  3. I had to write a review after my picky 3 year old just ate her 3rd helping! Will have to add some Vege next time for extra nutrients I think. So glad she has finally eaten some meat though. Loving my P2 version too. Thanks Nik!

  5. I don’t know how many times I’ve made this, but its seriously one of our “go to meals”. Its super tasty, and super easy to make! My 3 year old doesn’t like the texture of meat, so its easy for her to pick out the chunky bits of mince.
    I also love it, cause I can hide zucchini/carrot, finely grated into the sauce without her knowing.
    Love it!

  7. We’ve had our Thermo for about 4 years now. It’s spent the past several months being an over-priced blender. Decided to dust it off and try this recipe for the fambamz. Have to say, considering all the rave reviews on it, was really nonplussed. The kids are pushing it around their plates, husband and I grudgingly ate it coz we were darn hungry. Found the flavour quite flat, the cinnamon was just a weird taste/smell, and there just seemed to be something missing. I’m not sure whether all the reviews on here are positive for the actual recipe, or just the recipe designer.

    1. Haha oh dear dont insult the recipe developer haha i have fed this dish to a few people and even our lil fussy 2 year old loves it. Did you put in roo much cinnamon maybe?

    2. I’ve had a thermomix for just under a year and I have to admit it did not change my life like others rave about. I also only cook things that taste good.. And I cook this one alot! It’s so yummy! I can’t even taste the cinnamon… I sometimes do it without the meat and use the sauce for homemade ravioli.

    3. didn’t add the cinnamon but did everything else and I found it really really yummy. I made the one with real onion and garlic not powdered stuff though.

      not every recipe appeals to everyone. but these reviews would be honest.
      Im super fussy usually but I LOVE most of nik’s recipes which is a great surprise for me.

  8. Just want to say how much we all love this. Mummy was unable to walk the other week with stitches so daddy made old style spag bog. Oh dear!!! No one wanted to eat it as wasn’t the skinny spag bog! Everyone is happy tonight mummy back cooking our normal!!
    I’ve also done with chicken mince, added zucchini, lemon zest, carrot and is delish.

  10. This is perfect for us as our daughter doesn’t eat meat so we always have meat free pasta sauce. Now I can serve hers before adding the sauce to the mince. The texture and flavour was really nice. Will definitely make this again.

  11. In love with this dish. I always add the healthy carbonara sauce from THM and now make a lasagne with eggplant or sliced zucchini in place of pasta. As soon as I can get a zoodle machine, I’ll serve those, too. Blissful. I also grated cheese in my saucy bowl to give it some extra flavour. Turbo boost 2-3 times and it collected all the sauce from the bowl…..cooking now and can’t wait to try my latest variation 😊

    We found that the serving sizes if allowing for the full 6 suggested are very small, was 4 serves for us, but will definitely be made again!

  13. Wowie, I thought pasta sauce could only get so good…the. I tried this. Never again will I ever cook it on the stove top. Miss 10 and Master 6 had seconds and adults all extremely satisfied. Thanks again Nik

  14. I’ve made this twice now and using both methods.
    First time was following the quick version and although it was delicious I was not a fan of the cinnamon but hubby loved it.
    Second time round I used all fresh ingredients and added a carrot, zucchini and mushrooms and omitted the cinnamon and… AMAZING!!!
    This will be my go to Bolognese recipe from now on!

  15. I’ll admit it… I thought the skinnymixer’s who were making this and talking about how amazing it was were previously terrible cooks… Seriously, bolognese that’s amazing… Really guys?
    Then I made it.
    It’s incredible! It’s deep and has a little kick to it, and spice and… It’s just good! It’s even better if you make the carbonara sauce from The Healthy Mix and serve with spaghetti too. It made plenty for my HUGE eating man and I, (he had a bowl of mostly bolognese and carbonara as seconds too), and then there was still enough to make a lasagne for him to take to work as a few lunches this week.
    I can’t wait to make this one again, it’s going on the list of favourites!

  17. We made this last night for dinner. My kids are picky with their spag Bol, so I got my 5yo to help make it. Kids ate the lot, and so did the adults. It was very tasty. I just used half the cinnamon, and next time I might add some veggies. Will definitely cook again.
