Ingredients

  • 100 g raw - unsalted cashew nuts
  • 100 g frozen blueberries
  • 300 g chilled water
  • 4 ice cubes
  • 2 medjool dates - seeds removed
  • 1/2 ripe avocado
  • 1 tsp vanilla extract

Instructions

  • Add all ingredients to mixer bowl, blend for 1 min/speed 9/MC on.

Notes

Serves 1-2.

  1. This was so yummy for breakfast! I halved the cashews, and added less water and tasted nice. I had banana and granola in the smoothie bowl and loved it

  2. This was so yummy should of halved the amount im so full. I used almonds instead of cashews left out the vanilla and added a handful of spinich.

  3. OMG Nikalene, I can’t get enough of this delicious smoothie. It is so refreshing and very filling. I love it!!!

  6. Have made this twice in last two days….love it. Yummy and filling. Halved the recipe for me except for the chilled water, used 250g.

  7. Just made this to share with my 2 daughters. I think Miss 5 sums it up well: “Wow. Wow.” My girls & I – and their Dad! – are big fans of your recipes!!
    I have a bellini, so did it for 1.5 mins & don’t think it was quite as smooth as what yours looks, but next time I’ll soak the cashews overnight to see if that helps.

  8. I made this today with a few substitutions because I didn’t have everything… I used almonds instead of cashews and strawberries instead of blueberries. It was yum but definitely not as colourful as the original. I’d love to give it a go with the original ingredients, I think it would be much better.
