Ingredients

Meatballs

  • 400 g extra lean beef mince
  • 1 egg - optional
  • 1/2 tsp liquid amino or tamari - optional, omit if you are on changing habits protocol
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp herbamere or salt

Sauce

  • 400 g tin tomato
  • 100 g water
  • 150 g tomato passata or sugo
  • 15 g tomato paste
  • 1 tbsp stock concentrate of choice
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp herbamere or salt - optional
  • 1/2 tsp dried onion
  • 1/2 tsp dried garlic

Instructions

  • Add meatball ingredients to mixer bowl, pulse turbo 1 sec/5 times to roughly combine.
  • Form 12 meatballs from the mixture, put them into the simmering basket and rinse the mixer bowl.
  • Add all of your sauce ingredients to mixer bowl.
  • Put the simmering basket into the mixer bowl, cook for 15 min/steaming temp/speed 2/MC off. You can also steam vegetables at the same time in the steaming trays if you desire.
  • After 15 mins, put your meatballs in a thermal server and if you want to reduce your sauce further, you can cook it for an additional 5 min/steaming temp/speed 2/MC off place your simmering basket over the top to avoid splattering.
  • Serve over fresh zoodles 🙂

Notes

You can comfortably double this recipe, just adjust cooking times as required and utilise the steaming trays for extra meatballs.
If you don’t want to use onion and garlic powders in your recipes, and would rather fresh ingredients, that is fine… just chop before step 3 sauté in 30 g or 1 oz olive oil for 5 minutes.
1 tsp garlic powder = 2 garlic cloves
1 tsp onion powder = 1 medium brown onion
Keep in mind this is designed to be a very low calorie meal.

At step 4 use ST temp if using an Intelli and 120°C or 250°F if using a Supercook. If you're going to steam vegetables at the same time, you'll need to use speed 3 for an Intelli and speed 4 for a Supercool.
At step 5 use ST temp if using an Intelli (and pop a tea towel over the steaming attachment) and 120°C or 250°F if using a Supercook.

  1. Hi! Just want to say a big thank you for this recipe! I did the HCG diet a couple of years ago and have just started again this week. Last time I really overcomplicated things trying to plan out meals out of a recipe book where you had to prep so many things to make a meal. It became quite overwhelming and I ended up eating very basic and getting very bored! I think I could just about live on these meatballs and your chicken madras. They are so flavourful and easily adapted to feed the whole family. Thanks again!

    I’ve made the meatballs a few times now and they have always been good and just eaten them with spaghetti. Tonight I made zoodles for the first time (I was very unsure about them and didn’t look forward to eating them but I’m determined to not eat the carbs!) and omg! They were amazing! I could have sworn I was eating pasta! I think they make the meatballs and sauce taste better!

  3. The kids loved it and said we can have it for five more nights. The sauce would be good alone without the meatballs. I would like to try and make it likes bolognaise next time as hubby for some reason doesn’t like meatballs but likes bolognaise.

  6. I love this recipe, I havent got around to making the zoodles. I make a single serve of meatballs but double the sauce. I freeze the extra sauce and use it over gnochi with some fried churizo. Meat balls are so yum but the sauce is awesome and makes the dish.

  7. Well, you’ve done it again! This is so yummy. I ended up with more meatballs than 12, I think it was 15. But having them bigger would definitely stop the issue I’ve had in the past with dry meatballs. These are yummy and moist! Awesome work!

I may have to make it without store-bought passatta next time as i looked at the ingredients list and it’s got added sugar 🙁 so probably NOT HCG friendly after all, but that is my fault! Would love to try home made passatta next time so I can be sure there are no hidden nasties 🙂

  14. This is the easiest meatballs I have ever made and probably tastiest! We added a can of kidney beans to the mincemixture to make it stretch further. Big thumbs up from the whole family
