This recipe has a 2 chilli rating but can easily be made milder. In the book this recipe also has Green Rice and Cauliflower Rice variations.
Vegetarian Variation:

    Used Smokey paprika instead of chipotle powder and far out the flavour was insane! Coupled with the picadillo chicken with lettuce leaf cups. YUM! You’ve delivered Nik 😍 😋

  2. Hoping to make this for dinner tonight! I’m just wondering if chipotle seasoning is the same as chipotle powder? I’m assuming not, but I don’t know where to find chipotle powder (it wasn’t online at Coles or Wollies)… Thanks!

  3. I made the red rice as part of a huge Mexican feast and have also made it to serve with the Peri Peri Chicken as well. The lime squeezed over it really makes the dish! Love it ❤

  4. I originally made it with paprika and cayenne pepper because I couldn’t find chipotle powder. I have since found the powder and made it again and it tastes better with powder. Family loved it, was a hit with everyone. Will definitely make again

  5. I made the red rice to go in burritos with some of the other wider – was delicious and my two older sons declared the best rice they’d tasted! I made a double recipe and used leftovers for fried rice the next night. Best fried rice yet!!!

  6. I’ve made the red rice twice now and I can’t get enough. I had it with some mexican chicken the first time and tonight with Chili Con Carne. The flavour is delicious and I went back for seconds.

    I haven’t got chipotle yet so used paprika and pepper.
    Its delicious.
    Great with chicken.

  8. Made this today along with some others from ALTOM
    Used frozen cooked rice (just because I had it!) so cut down on stock volume – it was delicious – made 7 generous portions – will definitely be making it again!
