To celebrate Mothers Day 2018, I thought some gluten free & dairy free pancakes would be appreciated by all of the mothers out there who can’t have gluten or dairy.

I am not going to pretend that these are anything like the traditional pancakes made with flour and milk, but they are really delicious and a wonderful substitute if you can’t have the real thing. If you can have dairy, I highly recommend making some Skinny Whip (whipped ricotta) to serve with these!

Ingredients

  • 200 g blanched almond meal flour
  • 270 g oz tin coconut milk - you may need to adjust the amount depending on how liquid your milk is - see the pic below
  • 50 g oz honey - or preferred sweetener
  • 4 whole eggs
  • 10 g oz coconut oil or butter
  • 2 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla extract

Instructions

  • Preheat pan on a low heat. I used a griddle pan which made this very easy!
  • Add all ingredients to mixer bowl. Blend for 10 sec/speed 4/MC on. Scrape bowl down and repeat once.
  • Fry on a very low heat until cooked through, and flip. Almond meal pancakes can burn very easily so it is best to take your time with these. We recommend smaller pikelet sized pancakes.

You want a relatively runny mixture. Add coconut milk until you are happy with the consistency.
These are Sian’s pancakes cooked in a frypan. Feel free to comment and let us know whose pancakes look better!

  1. So so runny. My pancakes turned out nothing like pictures even after adding in another 6 heaped tablespoons of almond meal. If I do make them again, I won’t will maybe use a quarter of the milk in the recipe.

  4. I just made these and they were beautiful!! I only had 125g of almond meal, subbed flax meal to make up the difference! Used 12 g of honey (to lessen the sugar as I knew I’d be naughty and be drizzling maple syrup anyway!!) and everything else the same!! Would like to explore making this dairy free next time 🙂

  5. I have just made these and am finding the mixture so hard to flip. Perhaps my batter was too runny?

  6. Made these for Mothers Day high tea. Loved them. So did my two year old. At first I tried using almonds and didn’t mill them enough but second time I used Almond Meal and it was great.

  7. My goto weekend pancakes starts with whole raw almonds and rolled oats, speed 10.
    I use two eggs and don’t bother with the honey as the kids put it on once cooked.
    Works well with soy milk, note the oil is essential.
    So moist and delicious.

  8. This recipe is so good.
    I’m a LCHF follower with NO form of sugar except Stevia in my diet. Instead of the honey I put a couple of teaspoons of Stevia in its place. I could imagine honey would actually make the pancakes taste different to what mine did but they were great using stevia. As I can’t have fruit due to intolerance with any form of fructose, I sobbed some butter and sprinkled with cinnamon. ❤️
