Apple Pie Oat Bars are the perfect Lunchbox snack. Our kids, Leilani (6) and Patrick (5), LOVE the choc chip oat slice bars I created last year and it has been on my list to create a chocolate free version to mix it up a bit and reduce the sugar content a bit.

I was talking about what flavour combinations to do for the kids, and he suggested dried apple… then I said with cinnamon… and a great idea was born! I think these apple and cinnamon flavoured bars are even better than the original, which is saying something! Feel free as always to play around with the flavours in this healthy Thermomix Recipe. These Apple Pie Oat Bars freeze well and are great as small bites to pop in to lunch boxes or for an on the go breakfast option.

Ingredients

  • 150 g dried apple slices or rings
  • 300 g whole traditional oats
  • 80 g coconut milk - or milk of choice
  • 50 g sugar of choice - I used coconut
  • 3 whole eggs
  • 1 tsp cinnamon powder
  • pinch of salt

Instructions

  • Preheat oven to 190°C or 375°F, and lightly grease + line a medium sized slice tray.
  • Add dried apple to a dry mixer bowl. Chop for 3-4 sec/speed 6/MC on or until finely chopped.
  • Add oats to the apples and chop for 3 sec/speed 5/MC on.
  • Add remaining ingredients and combine for 15 sec/speed 3/MC on.
  • Press mixture into prepared tin and bake in the oven for 15 minutes or until golden brown. Allow to cool before cutting.

Notes

Keep in the fridge in an airtight container.
Freezes and defrosts well.
Gluten free: Replace oats with quinoa flakes of GF corn flakes.

  1. I made these today for the first time (can’t try them today tho coz I’m fasting) and husband is a bit middle of the road with them…I went back to check the recipe and I forgot to put the sugar in!!!! The kids were arguing when I was making them and I put a bit too much milk in and was obviously cursing myself and overlooked the sugar ….. my bad

  2. Made these for the ‘back to school’ bake up. They turned out great but when I tried them I realised I forgot to add the sugar! Lucky I had added extra fruits from the dehydrator…dried apple, mango & apricots. Love the choc chip version of these Nik & these are a great muesli bar consistency too. Thank you!

  3. My daughter made them and they are delicious but a bit dry…she said she felt the mix was quite dry…does anyone add anything extra for moisture?

    I just made these, they smelt so good I could only wait until they were just cool enough to eat.
    I used half the amount of sugar (25g) .

  5. I had been wanting to make these ever since the recipe came out. They are lovely ! My daughter and I enjoyed them today once cooled. I followed the recipe to a T and then cut them into bars, and bite size pieces as a lunchbox choice for pre school. They are in the freezer now and I will make them again. Thanks for another fab recipe.

    Hello,
    I made this and just substituted the oats for GF Corn Flakes (The Coles Brand are GF).

    Ingredients (ONLY 1 CHANGE FROM THE ORIGINAL)

    150 g dried apple slices or rings
    300 g GLUTEN FREE CORN FLAKES
    80 g coconut milk (or milk of choice)
    50 g sugar of choice (I used coconut)
    3 whole eggs
    1 tsp cinnamon powder – I did lots more but I love the taste of cinnamon
    pinch of salt

    Instructions – (I JUST ADDED 3 SECONDS TO STEP 3…. THEREFORE:)

    Preheat oven to 190°C or 375°F, and lightly grease + line a medium sized slice tray.
    Add dried apple to a dry mixer bowl. Chop for 3-4 sec/speed 6/MC on or until finely chopped.
    Add CORN FLAKES to the apples and chop for 6 SECONDS/speed 5/MC on.
    Add remaining ingredients and combine for 15 sec/speed 3/MC on.
    Press mixture into prepared tin and bake in the oven for 15 minutes or until golden brown. Allow to cool before cutting.

  8. These are great, I had a banana that needed using up so I added that and dropped the milk back to about 60 g and this worked really well. Also I only had 100g apple so threw in 50 g of sultanas. Cleary this recipe is very forgiving and versatile! I think that it will be a firm lunch box favourite!

  10. I usually love the Skinny recipes but this was no good. I followed the recipe but it was really dense and has a strange texture because of the dried apples. Going in the bin sadly….

    1. Sadly i agree, mine were dense and the texture of the apple made for a sponge like feel. Also a tad salty and only added a pinch . Not a lot of flavour either.

  11. They turned out pretty yummy, kids approved them so will be great for school lunchboxes. I used dried apricots and sultanas. Substituted 1 tbl chia seeds + 3 tbl water for one of the eggs just for fun. Used only 35gm of brown sugar, but still sweet enough with the fruit.

  12. I love all the Skinnies stuff but didn’t like these at all, I probably did something wrong. Just tasted very bland.

    1. First time I used the dried apple and it turned out ok but today I used apricots and it was much better for some reason.

    1. You can but dried apple or you could dry your own if using a dehydrator. You may also be able to dry apples in the oven- but I’m not sure of how to do this.

  13. These look delicious, but being coeliac and not having done the oats challenge yet, do you think quinoa flakes would make a good substitute for the oats?

  14. Nik that oats bars I have tried at least 20 different version. One of my favorite one was with mango, than with vegies pulp from the juicer. I dont use eggs I use chia seeds instead. Thank you for this version

      1. I too am interested…
        It’s probably a “chia egg” which is approximately 1tbsp chia seeds to 3tbsps water, soak for 5min.

        That quantity is roughly equivalent to 1 egg. 😊

      2. Claire I used one tbs instead of one egg and I even don’t soak in water I just add some more liquid milk or juice.
