Ingredients

  • 600 g topside beef - very thinly sliced
  • 6 cups of diced zucchini
  • 1,300 g water
  • 2 tbsp beef stock concentrate - or veg if you dont have beef
  • 2 tsp tomato paste
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp cracked black pepper
  • pinch cayenne pepper

Instructions

  • Put water, stock, onion, garlic, tomato paste, dried basil, dried oregano, pepper and cayenne in to mixer bowl.
  • Set for 10 min/steaming temp/speed 2/MC on.
  • In the mean time, start cutting up your zucchini and put it in the bottom steaming tray. Set aside.
  • Cut up your beef, thin slices are best as they cook very quickly. Set aside.
  • Put steaming tray with zucchini in place, cook for 8 min/steaming temp/speed 2.
  • Add beef to mixer bowl, cook for 2 min/steaming temp/lowest speed/reverse.
  • Serve with freshly grated lemon zest

Notes

Serves 6 on HCG protocol
If you don’t want to use onion and garlic powders in your recipes, and would rather fresh ingredients, that is fine… just chop at the beginning, add the rest of the dry spices and sauté in 30 g | 1 oz olive oil for 3 minutes.
1 tsp garlic powder = 2 garlic cloves
1 tsp onion powder = 1 medium brown onion

  2. Day one of Phase 2 on my first ever attempt at the HCG protocol and it has been HARD. It’s no secret that I am doing this because my track record of eating and cooking has not blessed me with great “grilling” and “broiling” skills or imagination, in fact my attempt at lunch today was a disaster. Bless you for this blog Nikkalene and bless you for this recipe. After spending the day hungry, miserable, dissatisfied and wanting to throw in the towel before I have even really begun, this broth has restored my energy and my willpower to push into day 2. I have a lot of weight to lose so I now consider you a life saver.

  3. A nice warming Winter meal perfect whilst on HCG protocol. Am needing to make another batch with the Skinnymixers beef stock as it’s just run out, so used the vegetable one tonight and it was still great. Love being able to prep the zuzzhini as the broth cooks, then prep the beef as the zucchini cooks- very productive!

  4. This was delicious and the broth made for a nice warming meal….not something I’d normally say in summer….but it wasn’t very warm the other day! I only had vegetable stock paste but I’m planning on making some batches of beef and chicken stock and putting them in the freezer to ‘up’ the flavour (and nutrition) of simple dishes.
