Chilli Mussels Thermomix Recipe

My dad LOVES mussels, and with Easter around the corner I thought it was a perfect excuse to get back in to the kitchen and cooking for this amazingly supportive community.

Cooking your mussels in your Thermo cooker is not only really quick, but they turn out plumper and less rubbery according to my family (I’ll take their word on this one…) – This has a great kick to it, but you can always reduce the chilli content for a more mild version. I hope you enjoy this recipe as much as I did developing it after a little recovery break.

Ingredients

  • 1 medium brown onion - peeled, quartered
  • 3 cloves of garlic - peeled
  • 3 fresh long red chillies - roughly chopped (you can deseed them and reduce the amount for mild)
  • 30 g olive oil
  • 400 g tin of diced tomato - I recommend Ardmona
  • 30 g tomato paste
  • 1 tbsp stock concentrate
  • 100 g water
  • 1 kg fresh mussels - debearded

to serve

  • handful of fresh continental parsley - roughly chopped
  • 2 tsp capers - optional

Instructions

  • Add onion, garlic and chilli to mixer bowl. Chop for 3-5 sec/speed 5/MC on. Scrape bowl down.
  • Add remaining ingredients, except for the mussels and serving ingredients. Cook for 10 min/steaming temp/speed 1/MC off.Put the deep steaming tray in place to avoid splatter in your kitchen.
  • Put the mussels into the deep steaming tray and cook for a further 7 min/steaming temp/speed 2 or until mussels are opened and cooked.
  • Stir through the sauce and mussels into a serving bowl, top with parsley and capers and enjoy!

Notes

You can swap out the mussels for firm fish, prawns or crab as well for an alternative seafood 🙂

    I can’t believe how easy this was! I used 2 chilli (and only one with seeds) – it was just the right amount of spice for us! I love the idea of using half wine and half water – will definitely try that next time!

    Made this last night , Super easy and delicious. We used 2 kgs of mussels and mixed them at the 7 minute mark then extended the time for about another 5 -7 mins . Turned out amazing.

    Great recipe, although the onion and garlic was still raw so I’ll cook them off first next time. I used two whole birdseyes and a little wine added.

  6. Once again you have outdone yourself Nik, hubby wants to do 2kg if mussels to the same ratio of sauc.
    To say the least absolutely awesome. And will do have again.
    I might reduce the sauce to make a marinara for another day 🙂

  11. Made this today, it was very nice. I added 50g white wine and 50g water instead of just water. Will make again

  12. This was really good. I made it into a fettuccine marinara. I cooked the sauce for 25mins, used 70g tomato paste and 2 tsp sugar before steaming 500g of marinara mix for 10 mins. 1 Birdseye chilli w half the seeds removed was perfect for us. Thanks for the inspiration and I look forward to trying your recipe as is in future!

    1. I have exactly the same problem, i have to use my computer or on the iPad, screen shot the recipe and print that.

  14. This sounds delicious. Can i ask what may be a silly question – is the deep steaming tray the varoma or the basket that goes in the thermomix?

        1. Meaning the big attachment that goes on top of the thermal cooker used steam in. Use the big deep tray that goes inside 🙂

  20. We made this tonight for our Good Friday dinner. We used a fillet of hoki and some prawns. It was delicious. Next time I’m going to add a couple of Birdseye chillies because I like a little more heat.
