Lemon Coconut Muffins

With school returning tomorrow for my kids, I thought it was about time I did something mini for their lunchboxes for an occasional treat.

I also have an abundance of beautiful ripe lemons on our lemon tree. I tried making these grain free with coconut flour, and had epic failure so I stuck with good old fashioned flour – if anyone is able to convert these to grain free for me (without nuts) let me know! I hope your kids love these.

Ingredients

  • 160 g cake flour - or plain if you don't have cake
  • 2 tsp baking powder
  • 1 egg
  • 80 g coconut sugar
  • 70 g tin coconut milk
  • 70 g lemon juice
  • 30 g coconut oil or butter - melted
  • 20 g dessicated coconut

Instructions

  • Preheat oven to 180°C or 350°F and prepare mini silicone muffin trays or muffin cases.
  • Add all ingredients to mixer bowl and blend for 20 sec/speed 4/MC on.. Scrape the bowl down and repeat for 10 sec/speed 4/MC on.
  • Spoon into muffin cases or silicone moulds and bake for 10-15 mins or until done.

Notes

LCHF / Grain Free / Nut Free Variation (Thanks to the lovely Leah Kelly):
60 g | 2.1 oz coconut flour
2 tsp baking powder
30 g | 1.1 oz soft butter
80 g | 2.8 oz natvia
3 eggs
90 g | 3.2 oz coconut milk
70 g | 2.5 oz lemon juice
1. Preheat oven to 180°C or 350°Fand prepare mini silicone muffin trays or muffin cases.
2. Add all ingredients to mixer bowl EXCEPT the coconut flour and blend for 20 sec/speed 4/MC on.. Scrape the bowl down, add the coconut flour and repeat for 10 sec/speed 4/MC on.
3. Quickly spoon into muffin cases or silicone moulds and bake for 10-15 mins or until done.
Bellini Users
Use your blunt blade for this recipe.
At step 2 extend mixing time if required.

  1. For the coconut milk- do you mean the stuff in a can or kind in a carton? I feel each would give different results so want to be certain. Thanks.

    Made the LCHF/Grain free/Nut free version. Followed the steps and i hate to say this, not good at all. I have not made one skinny mixer recipe which i have not enjoyed, this is a first for me 🙁

    I may try the normal version of these to see if they are any better but definitely won’t be trying the LCHF version. I really wanted to like these but just didn’t

  4. I followed the recipe to the T, the muffins didn’t ride and were like bricks, unfortunately looking nothing like your picture. What did I do wrong or could I try different to improve them? My babies are still eating them so not all lost. Thank you 🙂

    Dry, hope they turn out I used coconut flour maybe that is problem, wish I read comments first, I would have used grapeseed oil, waiting waiting.. Had to cook 30 mins didn’t rise and a bit crumbly.
    Sorry I don’t think I will make again, maybe try with oil. Sorry not a favourite.

  6. So, nearly 30 minutes in the oven now and these little bricks are yet to get colour one them. Yielded 7 muffins. I’m wondering whether you mean that these are cupcakes because they’re not muffins. The batter tasted wonderful so I’m sure the flavour will be there but as an avid baker I have to say I won’t be using this recipe again.

    I made the LCHF version, added lemon zest, still added the desiccated coconut and probably tripped the coconut milk as I thought the mix looked too dry. Soooooo good and moist! New Favourite treat!

  8. Made these today and they are yum! I had to mix for a little longer (in Bellini) as the mixture wasn’t quite combined, and cook for a little longer too (18 mins), but overall easy and yummy!

  9. I think you might mean 80g natvia in the lchf version (not 8!!). Have made these tonight – worked wonderfully 🙂

  10. Not grain free but I did sub successfully with white spelt flour (same ratio). Also used rapudura as I didn’t have any coconut sugar. I needed to cook for a little longer but they are yummy! Another great recipe

    Have you thought of trying sunflower seeds? I’ve successfully made choc fudge brownies by substituting the almond meal with sunflower seed meal. The ratio is 1:1. Whilst the almond meal version was fudgier, the kids approved and loved the sunflower seed version just as much.

    Not sure how it would go with this recipe and what the ratio from flour to meal would be, but worth a try?
