Ingredients

  • 1 small bunch parsley
  • 1 small handful fresh basil
  • 500 g ripe tomato - quatered
  • 1 carrot - roughly chopped (omit if P2 or 4)
  • ½ tsp onion powder
  • 2 tbsp stock concentrate
  • tsp black pepper cracked
  • 800 g water

Instructions

  • Put herbs into mixer bowl. Chop 3 sec/speed 7/MC on.
  • Add tomato and carrot. Chop 4 sec/speed 7/MC on.
  • Add remaining ingredients to mixer bowl. Cook 35 min/100°C or 212°F/speed 1/MC off.
  • After above cooking time, blend 1 min/speed 9/MC on increasing speed gradually.

Notes

Bellini Users
Use your sharp blade for this recipe.
At step 6 you may need to cook for slightly longer if using an Intelli.
At step 7 SLOWLY increase your speed from speed 4 to speed 9.

  6. I dont know what i did wrong but mine was horrible – no tomato flavour at all, very herby (maybe i put too much herbs ?) Epic fail for me and i love tomato so was very disapointed

      1. Using fresh tomatoes you do really need to have ripe/tasty tomatoes with such simple flavours.

      1. I have found if you blend tomato on a high speed it will go orange, try blending at a lower speed next time and see how you go.

  7. I love this soup! So easy and it’s great to have all the ingredients on hand! I found the water quantity a little excessive so I reduced it and served with a swirl of cream, Delish!

  8. This was so delicious. I added a couple of zucchini’s and used a whole onion instead of powder, so much flavor. Can’t wait to eat more tomorrow!

  9. Made this before having day surgery (when I couldn’t have it!) – Hubby tried it and loved it! I have just managed a bowl with shredded chicken added as well as a spoon of Greek yoghurt! So Yumm in my tumm!!
