Ingredients

  • 1 brown onion - peeled and quartered
  • 300 g rindless bacon - roughly chopped
  • 50 g mushrooms
  • 20 g ghee - or butter
  • 8 whole eggs
  • salt & pepper
  • slices of tomato - optional

Instructions

  • Preheat oven to 200°C or 400°F fan forced.
  • Add onion to mixer bowl, chop for 3 sec/speed 5/MC on.
  • Add bacon and mushrooms to mixer bowl, chop for 3 sec/speed 5/MC on.
  • At this step, you can either scrape the mixer bowl down, add ghee/butter and saute for 6 min/100°C or 212°F/speed 1/MC off or transfer to the stove top if you prefer.
  • Spoon mixture evenly amongst 8 large silicone muffin moulds, crack an egg into each one (ensuring the white covers the bacon well), sprinkle with salt and pepper, and top with tomato slice if using.
  • Bake in the oven for about 20-25 min or until set firm.

Notes

You can omit onion, mushroom or bacon if desired. You can also add grated cheese to the muffin moulds if you wish.
These can be made in advance and reheated in the microwave, varoma or oven as needed. Store in an airtight container for up to 3 days.

  1. Easy and delicious! I didn’t have quite the exact ingredients so added chorizo to my small amount of bacon and subbed spinach for the mushrooms- perfect result! Thanks – another winner 😊

  2. Not sure what I did wrong but I ended up with bacon mush in the bottom and an overcooked egg on top. Impossible to get out of the mould – had to throw the lot out.

    1. Hi Hedy, Did you cook the mixture in thermomix or on stovetop? Stovetop will make it less mushy. It depends on the fat and moisture content of the bacon I find, and I cook it quite a lot longer than it says in a non-stick pan, but always end up using the stovetop. I bake the eggs for quite a lot shorter time in the oven, keeping an eye on it. We don’t like hard boiled eggs for breakfast, so prefer a shorter cooking time. I also run a metal spoon around the edge after adding the eggs, to let it get down to the bottom of the moulds. Hope this helps.

  6. If you haven’t made this before you really need to!! We didn’t have any mushrooms so I subbed it for 1 carrot and about 20-30g of corn, topped with some chopped sundries tomatoes and then the egg. I also forgot to add salt and pepper but it was not needed at all!!!

    Hubby, and both kids devoured it!!!

  7. Delicious. I’ve had these every day for brekky for the past few months. I can’t eat much onion so I use equivalent of broccoli. I’m lazy and just use a 6 cup muffin tin and spread the mix over these. Sometime dollop some caramelised onion or relish between bacon mix and egg and then stir through the egg white.

  8. I don’t know what I did wrong but all the bacon mix was left in the bottom of the cup when I turned them out ? and was quite mushy. I’m sure they will taste great but transporting them won’t be as easy

    1. Same thing happened to me. They tasted good but the bacon mix looked like a can of tuna and came out separated and mushy. Will try again.

    I’m new to skinnymixers & almost a thermomix virgin as I only received “Thelma” Thermomix last wk haven’t had much of chance to play yet as I’m doing HCG diet & don’t finish till next wk.
    in step 4 you refer to MC off?? Can for clarify for me what this means.

  12. Yum I made these last night – add a tsp of tomato relish before putting in the egg and they are delicious – will be a regular in our house.

  13. Yum – gonna try these 😉 I make similar at the mo – pop a piece of feta on top of the bacon / onion / mush mix, and I whisk my eggs with a good splash of cream and pour that over – comes up like a crustless quiche – great for brekkie / snack on the go.

    1. Mine came out as 2 layers – the cooked egg and then the bacon mix. Should I have stirred through the egg once I cracked it into the muffin tray?
