skinnymixer's Tandoori Marinade

This weeks peoples choice winner was a Tandoori Thermomix marinade. You might also know this as Chicken Tikka; and its usually served bright red – to the point of wondering if you needed a Geiger counter to accompany dinner.

This Tandoori marinade recipe is made without the addition of Tandoori food colouring, but if you do want to achieve that neon red glow you can add 1-2 tsp before marinating. 

I chose to test it out with chicken legs and thighs, but it will work with most protein and vegetables.

We served this with Palak Raita as an entrée, and it will be a popular dinner coming into the hotter months in the Skinnymixer’s household, especially as the paste recipe gives you 4 lots to use! Please, read the notes for further instructions.

Ingredients

Tandoori Paste

  • 1 tsp black peppercorns
  • 4 green cardamom pods
  • 2 whole cloves
  • 300 g brown onions - peeled, halved
  • 60 g garlic - peeled (about 12 cloves)
  • 80 g fresh ginger - sliced into coins
  • 1 tbsp smoked paprika
  • 1 tbsp mild paprika
  • 4 tsp ground cumin
  • 4 tsp ground coriander seeds
  • 4 tsp garam masala - if you haven't got pepper free, omit the peppercorns
  • 2 tsp ground turmeric
  • 1-2 tsp cayenne pepper - depending on spice preference
  • 30 g olive oil

Tandoori Marinade

  • 1 portion of tandoori paste
  • 250 g Greek yoghurt - I use Jalna
  • 30 g fresh lemon juice
  • 2 tsp salt
  • 1 tsp honey - optional for sugar free

Instructions

  • **Please Note: This recipe requires 24 hour marinating for best results**

Paste

  • Add peppercorns, cardamom and cloves to mixer bowl. Insert simmering basket and mill for 10 sec/speed 9/MC on. Remove your simmering basket, ensuring to retain any milled spices in the bowl by tapping it gently.
  • Add remaining paste ingredients and blend for 10 sec/speed 9/MC on. Scrape bowl down and repeat once.
  • Portion out the paste into 4 x lots and freeze individually.

Marinade

  • Add all marinade ingredients to mixer bowl, combine for 5 sec/speed 3/MC on.

Notes

Makes enough marinade to marinate 1 kg or 35.3 oz of meat.
Marinate your meat in the fridge, covered, for 24 hours for best results. Scrape excess marinade off of the meat before grilling, oven baking or frying.
For those who are dairy free, you can skip the yoghurt and just marinate your meat with the paste.

Tandoori Paste - Repeat milling process in Step 1 until spices are ground. Add remaining paste ingredients and blend. You may need to repeat Step 2 twice to achieve paste consistency.
Tandoori Marinade - Extend mixing time until combined.

Smoked Tandoori marinated chicken thighs in my Traeger!

My plan was to then cut them up and cook them in to my butter chicken sauce but I ran out of energy 🤣🤣🤣🤣🤣

Then I smoked them in my Traeger at 257f until an internal temperature of 165f 🙂 big thanks to Grant Neal from The Smoking Joint for giving me the low down on how to cook these gorgeous thighs 😍😍😍😍

  2. This is a great marinade! Have used before but just checking batch size, does the full marinade do 1kg? Or does 1/4 portion size do 1kg?

  3. I am vegetarian and still want to try this out. What suggestions do you have for meat free ways to use the marinade? I was thinking of using it with chickpeas but not really sure how to? Would I bake it after it’s sat in the fridge for 24 hours?

  4. Currently have my chicken breasts marinating.

    I was hoping to use the marinade as a sauce with the chicken and some cauliflower rice. Would this be possible?

  5. Excuse my air-headedness….after you marinate and barbecue your chicken, at what point do you add the paste? I’m a bit confused but eager to try 😐

  6. Delicious! It makes me happy that I have another 3 serves of this paste in the freezer! I used on a whole chicken that I de jointed and then baked in the oven! So good!

  7. I absolutely love this recipe! It’s delicious and I love that I get another 3 dinners out of it. I saw a post where sian had told someone to have it with the palak raita and OH MY GOD it takes it to a whole other level! We have leftovers on wraps the next day! One of my faves!

  8. This is to die for! We always make tandoori chicken with drumsticks and wings, so economical and easy when you have the paste in the freezer ready to go.
    This is on regular rotation at our house and I think it’s a great one to make in bulk for visitors.

  9. I currently have 2kg of chicken thighs vacuum sealed and marinating in the freezer ready to go for when we have a full house at short notice. It is such a wonderful flavour and I love it served with just a crunchy healthy salad and minted yoghurt, or with rice or naan.
