skinnymixer's Warming Porridge

I developed this grain free Warming Porridge recipe when I discovered that I was gluten intolerant. It immediately became apparent how restrictive my breakfast meal options would be without cereals and grains on the menu.

One of the things that I missed the most was slow cooked oats on a cold winter morning, and I was sure that there were plenty of other gluten intolerant people in the community who felt the same.

This gluten free breakfast Thermomix recipe for ‘warming porridge’ captures the warmth and satisfaction that you get from a bowl of warm oats, without compromising your health.

Ingredients

  • 30 g raw almonds
  • 30 g raw macadamia nuts
  • 30 g brazil or cashew nuts
  • 1 whole apple - quartered
  • 1 medjool date - deseeded (optional or 1 tbsp sweetener)
  • 25 g flax seed or linseed meal or chia seed meal
  • 10 g shredded coconut
  • 270 g coconut milk - plus extra for serving if desired
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 15 g ghee - butter or coconut oil

Instructions

  • Add nuts to mixer bowl, chop for 5 sec/speed 5/MC on. Set aside.
  • Add apple and date or sweetener if using and chop for 3 sec/speed 5/MC on. Scrape bowl down.
  • Add 50 g or 1.8 oz water to apple and cook for 5 min/steaming temp/speed 2/MC on.
  • Blend for 3 sec/speed 5/MC on.
  • Add remaining ingredients, (you may also need to add a little water, depending on the kind of brand and milk you use), and cook for 4 min/100°C or 212°F/speed 2/MC on or until desired consistency is reached.
  • You can add extra milk or water at this stage and blend through if you prefer a runnier porridge.

Notes

You can substitute the coconut milk with normal milk, cream, nut milk etc, but may need to reduce the water accordingly.
You can use 90 g or 3.2 oz of any type of nuts or seeds you prefer, experiment with what you've got!
You can omit the apple and step 2 completely, substituting the sweetener with 1-2 tbsp rice malt syrup for a low fructose version.
You can soak your nuts overnight for those who want to.
This porridge will thicken on cooling, you can reconstitute it by stirring through more milk of choice.

  4. Love this “porridge”. One batch makes 3 very filling serves. I mill linseeds, put aside, then crush my nuts/seeds, add to linseed meal, then make 270g coconut milk, add this to the bowl set aside. Then add it all after cooking the apple! 🙂

  7. This ‘porridge’ is delightful! It was lovely to have something that was FODMAP-friendly AND with the double-bonus of tasting good! It’s often soooo hard to get think of compliant breakfasts, but this will certainly become a regular for me throughout the coming winter months! Well done on yet another fantastic recipe 🙂

  11. Thank you Nik, This is amazing! I can’t eat oats so I miss the warmth & comfort of traditional porridge. This hits the spot completely. I made mine with Almond milk & it was perfect, hubby even commented on how much he liked it.

  12. Made this today for breakfast. So, I’m not a morning person at all and I mucked the recipe up a bit. I didn’t take the nuts out after blitzing them so the were cooked with the apple and water. But it was delicious, thank you Nik. This is definitely a favourite. Next time I’ll follow the recipe properly.

  13. She’s done it again! Nik, this is seriously amazing. It even has that gloopy porridge consistency that I love! I used almonds, macadamias, cashews, apple, date, LSA mix, vanilla, butter, and regular milk and it’s insanely good. Insanely!!

  16. I just made this with 45g each of sunflower seeds and pepitas, and it was delicious. I should have milled my linseeds first instead of all together as many remained whole instead of meal, but was still really a good grain an dairy free breakfast.

  17. Another winner from Nikalene. We made this for our breakie this morning with Walnuts/Almonds/Brazil and chia meal. It was delicious and very filling. I really miss oats in winter so this will very quickly become a staple in our house in Winter.

  18. I’m no good in the kitchen. I don’t get how one type of food goes with another or what additions are going to add flavour-depth to a mixture or when to stop adding salt.

    I’m relatively new to Skinnymixers Land but I like it here and I’m going to stay. (Nik’s Banana Bread, Chicken Zoodle Soup, Mexican Slow Cooked Pulled Pork, Health by Chocolate Torte and now this delicious porridge have convinced me. And I haven’t even tried the Butter Chicken yet!) It doesn’t matter that I didn’t pack enough knickers for forever or that I’ve left my two mini-men jumping on the trampoline for eternity. I’m staying here.
