Za’atar Grilled Chicken. This is a beautiful middle eastern inspired dish, which would go fantastic with my Pita Bread Wraps if you do gluten. We served with a simple salad and there were clean plates and no leftovers

Manooshi made with my Pita Bread Recipe topped with Za’atar and baked.

I really wanted to do something exciting with my left over lamb from Easter and I took inspiration from a small, little known Adelaide cafe called Manooshi in the East End.

Before the world went crazy, this little venue became a regular brunch spot for The Smoking Joint and I… eating this gorgeous middle eastern food while talking about what comes next in our adventures.

Now that Manooshi is no longer open, I thought it would be beautiful to bring a little Manooshi to my home today.

It’s such a delicious meal – and so simple. All you have to do is knock up a batch of my pita bread & Za’atar marinade.

Instead of pan frying the breads, you spread them with zaatar and bake them in the oven for 7-10 minutes.

You can then top with left over meats, fresh vegetables and lemon juice. It’s so ridiculously delicious.

Ingredients

  • 15 g white sesame seeds - omit for HCG p2
  • 1 tbsp ground sumac
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp coconut sugar - or preferred sweetener
  • 1 garlic clove - peeled
  • 15 g olive oil - omit for HCG p2
  • 30 g lemon juice
  • 8 deboned chicken thighs
  • 1 whole lemon

Instructions

  • Put sesame seeds into mixer bowl, toast for 10 min/100°C or 212°F/speed 2/MC on. Allow to cool completely.
  • Add cooled sesame seeds, sumac, oregano, thyme, salt, coconut sugar and garlic clove to mixer bowl. Chop for 3 sec/speed 9/MC on. Scrape bowl down.
  • Add olive oil and lemon juice to mixer bowl and combine for 5 sec/speed 4/MC on.
  • Combine marinade and chicken thighs in a glass bowl, cover and refrigerate for a minimum of 1 hour. Overnight is ideal.
  • BBQ, Grill, bake or fry chicken thighs until cooked and charred.
  • Squeeze the juice of one whole lemon over the cooked meat and serve.

Notes

This recipe is adaptable for HCG Protocol Phase 2 by omitting the olive oil, sesame seeds and coconut sugar.

    hanks! My fiancé is an amazing cook but me, not so much! I made this today for dinner so he didn’t have to cook. It was great! Easy enough for this inexperienced cook and tasty enough for his experienced taste buds! I added A super reduced balasmic on top since we use it for Caprese salad and it baked onto The chicken really well. This recipe is a keeper! Any idea for a balsamic Like sauce to go with it?

  3. Chicken Za’atar is definitely one of Skinnymixer’s most underrated recipes. It packs so much flavour with only a few simple ingredients. I was pleasantly surprised the first time I made it (I don’t know why…)
    I’ve only made with chicken thigh & I just bake them in the oven on baking paper until they’re done.

    1. Yes you can
      I do lots of the recipes like that, pop in a snap lock bag
      Then just defrost in fridge throughout day as cool as required
      It’s perfect and saves so much time and cleanup during the week.
      I usually do two or three at a time

  12. I made this according to the hcg p2 protocol (minus oil and sesame seeds) and I substituted lemon zest and pepper for sumac as didn’t have any. Delicious and easy to make.

  13. This is me and my husband favourite dinner at the moment! Those flavours are incredible! It’s so easy and even better the next day cold!!! We used thighs which my husband usually hates but it really tastes better than breast, I think, for this recipe.

  14. So delicious! I usually cheat and use my Lebanese mother in laws Zaatar spice blend with the coconut sugar, lemon juice and olive oil but tonight I made it exactly as per Nik’s recipe and I think it was even better!
    Served with Nik’s jewelled rice and minted yoghurt sauce. Sooooo good. Thank you!

  15. What a yummy recipe. Even my 9yo fusspot thought it was awesome! I couldn’t find any sesame seeds today so i skipped that bit but otherwise followed the recipe. Thanks Nik for helping me overcome my fear of cooking thigh fillets whole.

  16. Tried this during the week and it was fantastic. So delicious and eaten very quickly. Right now I have 3kgs of chicken marinating away getting ready to share with 30 people at a barbecue tomorrow. So easy to prepare!
