After the success of Aussie Meat Pie Filling, and the consistent obsession within the Thermomix community to turn all things into pies; I thought I would do a classic Creamy Chicken & Leek Pie Filling packed full of vegetables and flavour for The Healthy Mix III cookbook.

  • chicken stock concentrate
  • dijon
  • dried parsley
  • dried thyme
  • button mushrooms
  • chicken thigh
  • coconut milk or cow's cream
  • frozen vegetables
  • cornflour or xanthan gum

  1. I am kicking myself that I have waited so long for trying this dish. Will now become a new favourite of mine.

  2. Delicious pie filling. This was a little more time consuming than others. Also make sure the filling is cold before putting into pies.

  3. Oooohh this is so yum! Totally hits the comfort food mark and it’s so easy to adapt to your dietary needs. I made an individual pie in a ramekin for my partner with gluten free puff pastry and I served mine on top of chopped silverbeet with cauliflower and leek mash for a low carb Shepherds Pie type pie. I only had chicken breast so used Reverse on a couple of steps to ensure it wasn’t totally shredded by the end as I like some texture. Nailed it again, Nik!

  4. So delicious. Made so much filling, enough for 6 adult sized pies made in a deep pie maker. Love the addition of leek. Super tasty. This one receipe convinced my mum to go out and get a pie maker.

  5. This is SO tasty and makes enough filling to have leftovers! My family and I liked it even more than my previous go-to recipe. It’s delicious and easy.
