Guest Recipe: Lalas Kitchen's Creamy Lemon Butter Chicken

Ingredients

  • 2 tsp chicken stock concentrate
  • 200 g water
  • 3 garlic cloves peeled
  • 60 g oz butter
  • 1-2 Tbsp paprika
  • Salt and Pepper to taste
  • 6-8 chicken thigh cutlets with bone left in
  • 120 g double thickened cream
  • 30 g grated parmesan cheese
  • juice of one lemon 40g or 1.4 oz
  • 1 tsp dried thyme
  • 60 g baby spinach roughly chopped (but I left mine whole!)
