THMVI: Hodge Podge Brunch

This dish was so affectionately named Hodge Podge Brunch because you can pretty much throw any veggies in it, and use whatever combination of minces you like to mix it up. It can be prepared ahead of time and enjoyed cold or hot, and I particularly love it with a good dollop of Tomato Relish.

  • baby spinach
  • eggs
  • onion poweder
  • sweet paprika
  • garlic powder
  • cracked black pepper
  • tomato
  • beef mince
  • dried oregano

  • nutritional yeast flakes or grated parmesan
