Ingredients

  • 5 mangoes peeled, cut into small cubes
  • 1 medium red capsicum deseeded, finely diced
  • 1 small red onion peeled, finely diced
  • 1 fresh jalapeño chilli or long red chilli, seeded, deveined and finely diced
  • 1 large handful fresh coriander finely chopped
  • 20 g olive oil
  • 2 limes juiced
  • ¼ tsp salt to taste

Instructions

  • Add all ingredients in to a bowl and combine well. I recommend making this a few hours before serving so that the flavours develop.
