Kim's Cheesy Chicken & Broccoli Pasta Sauce

This Cheesy Chicken & Broccoli Pasta Sauce is great to add to the freezer stash for kid-friendly meals.

Ingredients

  • 100 g tasty cheese cubed small
  • 100 g onion peeled, quartered
  • 25 g olive oil
  • 150 g carrot roughly chopped
  • 375 g frozen broccoli (allowed to defrost a little) or 250 g fresh broccoli florets
  • 250 g milk of choice
  • 100 g water
  • 20 g butter cubed
  • 20 g plain flour gluten free if required
  • 1 Tbsp garlic powder
  • 1 Tbsp Chicken Stock Concentrate
  • 300 g chicken breast sliced

Instructions

  • Add cheese to mixer bowl, grate for 3 sec/speed 9/MC on. Set aside.
  • Add onion to mixer bowl, chop for 3 sec/speed 5/MC on. Scrape mixer bowl down.
  • Add oil and cook 5 min/100°C or 212°F/speed 1/MC off.
  • Add carrot and broccoli, chop for 4-6 sec/speed 5/MC on - until no large chunks remain.
  • Cook for 3 min/100°C or 212°F/speed 1/MC off. Use this time to boil the water to cook your pasta on the stovetop.
  • Add remaining ingredients except chicken and reserved cheese. Cook for 5 min/100°C or 212°F/speed 3/simmering basket on top of lid.
  • Add chicken and cheese. Cook for 8 min/100°C or 212°F/reverse/speed 1/simmering basket on top of lid.
  • Combine sauce with cooked pasta of choice and season with salt/pepper.

Notes

Kim likes to cook 125 g dried pasta to go with this sauce & divide everything into 6 portions - roughly 330 calories per serve with pasta depending on brands used.
