Apple Cinnamon Muffins - Easy Thermomix Recipe

- 250 g apples peeled, cored, and quartered
- 100 g unsalted butter cubed
- 150 g brown sugar or coconut sugar or 100g erythritol/monk fruit sweetener (adjust to taste)
- 2 large eggs
- 150 g cultured buttermilk or 150g milk of choice mixed with 2 tsp vinegar
- 5 g vanilla extract or vanilla paste
- 250 g self-raising flour gluten-free if required
- 2 tsp cinnamon powder
- 1 tsp baking powder
- 1 pinch salt
Optional for sprinkling
- 2 Tbsp raw sugar or brown sugar or coconut sugar
- 1/2 tsp cinnamon powder
Preheat fan-forced oven to 180°C or 355°F. Line a 12-hole muffin tin with paper cases.
Place prepared apples into mixer bowl. Chop for 3 sec/speed 5/MC on. Scrape down mixer bowl and repeat if necessary until finely chopped.
Add the cubed butter to the bowl. Melt for 2 min/70°C or 158°F/speed 2.
Insert the butterfly. Add sugar, eggs, buttermilk, and vanilla. Mix for 20 sec/reverse/speed 4/MC on.
Remove the butterfly. Add flour, cinnamon, baking powder and salt. Mix for 10 sec/reverse/speed 4/MC on.
Divide the batter evenly among the prepared muffin cases. If desired, top each muffin with optional sprinkle for added texture and sweetness.
Bake in the preheated oven for 18–22 min, or until a skewer inserted into the centre comes out clean.
Allow muffins to cool in the tin for 5 min before transferring to a wire rack to cool completely.
Dairy Free: Use dairy-free spread and milk of choice to make buttermilk.
Low Carb: Replace self-raising flour with 200g almond flour and 50 g coconut flour. Use almond milk and 100g erythritol or monk fruit sweetener (adjust to taste).
