Guest Recipe: Mez's Sticky Date Tea Loaf

When we received the request for a chunky date loaf, Mez got straight into the kitchen to develop this delicious Thermomix recipe.

Equipment

  • loaf tin approx. 22 x 12 cm
  • baking paper

Ingredients

  • 250 g hot tea strong black tea works best
  • 150 g dried dates pitted
  • 120 g butter cubed (dairy-free if required)
  • 100 g sugar of choice caster or brown sugar (Brown sugar will give you a darker coloured loaf.)
  • 220 g self-raising flour gluten-free if required
  • ½ tsp bi-carb soda
  • 10 g vanilla paste
  • 1 pinch salt

Instructions

  • Preheat fan-forced oven to 180°C. Grease and line a loaf tin (approx. 22 x 12 cm).
  • Add dates to mixer bowl. Chop for 3 sec/speed 7/MC on. Scrape down.
  • Add hot tea and butter. Mix for 10 sec/speed 3/MC on. Scrape down and leave mixture in bowl to cool for 15 min.
  • Add sugar, flour, bi-carb soda, vanilla paste and salt. Mix for 20 sec/speed 4/MC on. Scrape down and repeat if needed until just combined.
  • Pour mixture into prepared loaf tin. Bake 40 min, or until a skewer inserted in the centre comes out clean.
  • Cool slightly in tin before transferring to a wire rack.
  • Allow to cool completely before slicing, as it is very soft.
  • Tip: For chunkier dates throughout the loaf blend on Speed 6 , or chop your dates by hand.
