THMVI: Roasted Tomato Soup w Dumplings

Roasting your tomatoes adds a whole new, sweet dimension to my favourite childhood soup. Adding in the flavour packed dumplings and it is other worldly and makes this very low calorie soup a little more filling and nutritious too. If you love the dumplings as much as I do, then I encourage you to make them up for other soups and meals independently.

  • brown onion
  • garlic
  • stock concentrate of choice
  • tomato paste
  • baby spinach
  • fresh basil leaves
  • parmesan cheese cubed small
  • lemon
  • ricotta preferably firm ricotta from deli
  • almond flour or plain flour (gluten-free if required)
  • egg
  • cracked black pepper

Notes

Tip: You can choose to lightly pan fry your dumplings before serving if you want to be fancy.
