Tropical Coulis with Mango & Passionfruit

Ingredients

  • 350 g mango, cubed (fresh, canned or frozen-defrosted) (flesh from 685 g jar/tin of mango, drained)
  • 2 tsp caster sugar or sugar of choice
  • pinch salt
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 tsp orange zest
  • 20 g orange juice
  • 1 Tbsp passionfruit pulp

Instructions

  • Add mango, sugar, salt, vanilla, zest and juice to mixer bowl and mix for 30 sec/speed 9/MC on.
  • Add passionfruit and cook for 5 min/100°C or 212°F/ reverse/speed 1/simmering basket on top of lid.
