Whether you spike your custard with Baileys Irish Cream Whisky Liqueur or some Brandy, it will definitely be a popular after dinner treat these holidays and goes well with Christmas Pudding!

Ingredients

  • 500 g milk of choice
  • 50 g sugar of choice (reduce for sugar free sweetener)
  • 30 g cornflour
  • 3 eggs
  • 1 tsp vanilla bean paste
  • 100 g Baileys Irish Cream or 40-60 g Brandy

Instructions

  • Add milk, sugar, cornflour, eggs and vanilla bean paste and cook for 7 min/90℃/speed 4/MC on.
  • NOTE: You can serve the custard now before the next step if anyone is needing an alcohol-free version. The Baileys isn't cooked and no alcohol is cooked out of this recipe. Simply adjust the amount of Baileys you add to taste afterwards.
  • Add Baileys and blend for 10 sec/speed 4/MC on. If you prefer a runnier custard you can add milk and blend again. Feel free to start with less of the alcohol and add, taste and blend again.
