- 500 g milk of choice
- 50 g sugar of choice (reduce for sugar free sweetener)
- 30 g cornflour
- 3 eggs
- 1 tsp vanilla bean paste
- 100 g Baileys Irish Cream or 40-60 g Brandy
Add milk, sugar, cornflour, eggs and vanilla bean paste and cook for 7 min/90℃/speed 4/MC on.
NOTE: You can serve the custard now before the next step if anyone is needing an alcohol-free version. The Baileys isn't cooked and no alcohol is cooked out of this recipe. Simply adjust the amount of Baileys you add to taste afterwards.
Add Baileys and blend for 10 sec/speed 4/MC on. If you prefer a runnier custard you can add milk and blend again. Feel free to start with less of the alcohol and add, taste and blend again.
