Skinnymixer’s Baileys Custard is an extra special treat this festive season – it pairs perfectly with Mez’s Christmas Puddings.
This festive season just got a little bit merrier…. everyone always loves Brandy Custard with their Pudding or Trifle, but have you tried Baileys Custard!?
This Thermomix recipe is definitely a treat Skinnymixers recipe, but after you taste it I’m sure you will forgive us.
The best part is that it works perfectly with dairy-free milk – so our dairy-free Skinnies don’t need to miss out on this boozy custard!
Dairy Free Boozy Custard Ideas:
- Amarula Vegan Cream – find it at Dan Murphy’s or other bottle shops. Taste profile is caramel, vanilla and creamy coconut finished with the Marula fruit. The Vanilla Spice version would be delicious in this custard too.
- Brandy – being a little stronger than Baileys we recommend reducing the amount to 40-60g to taste.
- Frangelico
- Kahlua or other coffee liqueurs like Mr. Blacks
- Cointreau – or even a Christmas spiced gin would be delicious. Reduce the amount to 30-40 g to taste.
Alcohol Free Custard Ideas:
- Simply serve the custard before adding the alcohol, it is delicious!
- you can also try adding 30g of cacao powder to the custard before cooking for a delicious chocolate custard
- try adding 1-2 shots of espresso for a delicious coffee flavoured custard!

Ingredients
- 500 g milk of choice
- 50 g sugar of choice - (reduce for sugar free sweetener)
- 30 g cornflour
- 3 eggs
- 1 tsp vanilla bean paste
- 100 g Baileys Irish Cream - or 40-60 g Brandy
Instructions
- Add milk, sugar, cornflour, eggs and vanilla bean paste and cook for 7 min/90℃/speed 4/MC on.
- NOTE: You can serve the custard now before the next step if anyone is needing an alcohol-free version. The Baileys isn't cooked and no alcohol is cooked out of this recipe. Simply adjust the amount of Baileys you add to taste afterwards.
- Add Baileys and blend for 10 sec/speed 4/MC on. If you prefer a runnier custard you can add milk and blend again. Feel free to start with less of the alcohol and add, taste and blend again.
