THMD2: Corned Beef Dinner with Horseradish Cream

Equipment

  • slow cooker

Ingredients

  • 1000-1500 g corned silverside

Rub

  • coriander powder
  • cracked black pepper
  • sea salt flakes or kosher salt
  • onion powder
  • garlic powder
  • mustard powder
  • cayenne pepper optional

Braising liquid

Vegetables

  • baby potatoes
  • carrot
  • cabbage

Sauce

  • sour cream
  • horseradish cream
  • Creamy Mayonnaise
  • Dijon mustard
  • apple cider vinegar
  • fresh chives

Instructions

To Cook in the Thermomix

  • Change water from 500 g to 1500g, cut potatoes into quarters. Follow the first 5 steps of the recipe in the book.
  • Place beef in deep steaming tray, ensuring it fits comfortably & the lid closes properly. Cook for 75 mins/steaming temp/Speed 2.
  • Set steaming tray aside. Insert simmering basket & add potatoes.
  • Place steaming tray with beef back into position & add carrots & cabbage to steaming stray, around the beef. Place lid back on & cook 15 mins/steaming temp/Speed 2.
  • Check if vegetables & beef are cooked to your liking. If not, cook for a further 6 - 10 mins.
  • Remove beef to ThermoSever & pour braising liquid on top, until ready to serve.
