Ingredients

  • 2 cloves garlic peeled
  • 60 g unsalted butter cubed or olive oil
  • 150 g cream (dairy-free if required)
  • 20 g Dijon mustard
  • 1 tsp onion powder
  • 10 g chicken stock concentrate or vegetable stock concentrate
  • ¼ tsp cracked black pepper
  • 150 g avocado flesh in large bite-sized cubes (approx. 1 avo)
  • salt and pepper to taste

Instructions

Thermo cooker

  • Add garlic to mixer bowl. Chop for 3 sec/speed 9/MC on. Scrape bowl down.
  • Add butter and cook for 5 min/steaming temp/speed 1/MC off.
  • Add cream, mustard, onion powder, stock concentrate and pepper. Cook for 2 min/100℃/speed 1/simmering basket on top of lid.
  • Add avocado and cook for a further 3 min/100℃/reverse/slowest speed/simmering basket on top of lid. If desired, blend for 20 sec/speed 5/MC on. Season to taste.
  • Serve on grilled, steamed or air fried chicken.

Conventional:

  • Chop garlic finely and heat butter and garlic in a medium frying pan over medium-high heat until butter has melted - approximately 5 min.
  • Turn the temperature to medium-low heat and add cream, mustard, onion powder, stock concentrate and pepper. Allow to simmer lightly for 2 min.
  • Add avocado and stir through the sauce. Allow to simmer, stirring lightly for 3 min. Serve immediately. Season to taste.
  • Serve on grilled, steamed or air fried chicken.

Notes

Dairy Free:

Use dairy-free cream and dairy-free butter spread/ghee. We love the Flora dairy free cream found at Coles and Woolworths. You can also use light coconut cream if you like.

Low Fodmap:

Use lactose-free cream. Omit garlic and replace half of the butter with garlic-infused olive oil. Replace onion powder with dried chives.

Halved/Doubled:

This recipe can only be halved using the conventional method. To double in the thermo cooker, extend the cream cook time step by 1 min.
