THMD4: Slow Cooked Lamb & Red Wine Casserole

Tender slow cooked lamb in a rich gravy is pure perfection in a bowl. I like to use a medium-bodied red wine like Shiraz, Merlot or a not too heavy Cabernet Sauvignon. You don’t want the cheapest red wine, but aim for a drinking wine in the $15–30 range. Feel free to use other slow cooked cuts of meat.
