Bold flavours abound in this delightful healthy summer dish which will be an instant hit on any prawn loving table. I haven’t always loved prawns, but this salad is seriously flavour-packed! This zesty salad also lends itself to poultry and is perfect cold or warm.

- fresh basil Leaves

- pine nuts
- light tasting olive oil
- Greek yoghurt or Greek coconut yoghurt
- lemon
- ground white pepper
- raw prawn meat
- baby asparagus or large asparagus
- Southern Style Bay Rub or rub of choice
- ripe avocado
- cherry tomatoes
- cos lettuce
