I always wanted to create a recipe for a popular West American dish called “Funeral Potatoes”. While it’s an accepted dish in America, I thought that perhaps some of our other communities might find the name a little confronting, so we decided to call them what they are in SkinnyAmerica – the most delicious Cheesy Potato Bake Casserole ever!
Traditionally they are topped off with crunchy buttered cornflakes but we wanted to try and make them a bit healthier by using breadcrumbs instead.
They are also often made with packet soup mix or tinned soup, so we have replicated those flavours using spices and herbs to help with making this creamy dish as nutritious as possible.
What you will need:
- stale bread or almonds
- dried parsley
- garlic powder
- onion powder
- white potatoes – if you don’t eat white potatoes, sweet potato or cauliflower works really well too.
- sharp cheddar cheese
- Parmesan cheese
- cottage cheese – you can replace this with cream or sour cream (dairy-free if required)
- milk of choice
- plain flour (gluten-free if required)
- Chicken Stock Concentrate
- onion powder
- cracked black pepper
Equipment
- metal baking dish 22 x 28 x 5 cm | 8.6 x 11 x 2 “ – if using a glass or ceramic dish, you may need to extend the oven cooking time for an additional 20-30 min. You can help speed up using a glass dish by preheating the dish.
