Skinnymixer’s Mango Coconut Chia Pudding is perfect for a filling, delicious, nutritious breakfast, snack or dessert!
Our first free Thermomix recipe for 2025 is a delightful Mango Coconut Chia Pudding!
The mangoes are delicious this time of year, so I wanted them to really shine through for this recipe.
You can also change the mango to strawberries, blueberries or even banana.
We start out by mixing the dairy-free mango custard to go on top and then the chia pudding. Then we assemble and top with fresh mango.
Perfect for a filling breakfast or even lunch on a hot Summer day. This recipe is dairy-free, gluten-free and refined sugar-free.
What You Will Need:
- Coconut Milk – I prefer Light Coconut Milk for the lower calories and also flavour. But you can use whatever coconut milk you like. If you can’t have coconut, you can use your milk of choice.
- Ripe Mango – you can use fresh or frozen mango, You can also mix up the fruit and use strawberries, blueberries or banana.
- Maple Syrup – you can replace with rice malt syrup, coconut sugar, honey (but it will taste stronger) or your low carb sweetener of choice.
- Vanilla Bean Paste
- Cornflour – feel free to replace with 1/2 tsp xanthan gum
- Turmeric Powder – this is for a colour boost, but you can leave this out if you like.
- Chia Seeds
Ingredients
Mango Custard:
- 400 g light coconut milk - you can use normal coconut milk too
- 300 g frozen or fresh mango
- 20-50 g maple syrup - optional if your mango is very ripe!
- 1 tsp vanilla bean paste
- 20 g cornflour
- 1/8 tsp turmeric powder - optional
Chia Pudding:
- 400 g light coconut milk - you can use normal coconut milk too
- 80 g chia seeds
- 30 g maple syrup
- 1 tsp vanilla bean paste
Instructions
- Add coconut milk, mango, maple syrup, vanilla to mixer bowl. Blend for 30 sec/speed 9/MC on. Scrape mixer bowl down.
- Add cornflour and turmeric. Cook for 5 min/100°C/speed 4/MC on.
- Set most of the custard aside in the fridge to cool briefly, leaving about 1/4 cup in the bowl. Add chia pudding ingredients and cook for 5 min/37°C/speed 2/reverse/MC on.
- Assemble and top with fresh mango.
