Picadillo chicken is traditionally used in Mexico as a stuffing recipe for chillies, tortillas and empanadas and will be loved by the whole family. This is a healthy and flavor-packed shredded chicken recipe that has plenty of uses – try it cold for lunches too.

Ingredients

  • chicken breast
  • white onion
  • fresh garlic
  • dried raisins
  • green olives
  • whole clove
  • dried oregano
  • coriander powder
  • cumin powder
  • tomato paste
  • blanched almond meal

Notes

This recipe has a mild 1 chilli rating. There are Low Carb serving suggestions in the book.
Vegan/ Vegetarian Variation - Thank you to Jasmine McCarty for the conversion
Instead of chicken use a large tin of young jackfruit (sometimes labeled as green jackfruit) and drain and press dry
Add to mixer bowl instead of chicken as per step one. Add salt, pepper and 250 grams water
Follow recipe as per original
The jackfruit is even more amazing when replacing the pulled pork!
I marinate the jackfruit in the sauce combined with the dry rub mixed through for 2 hours then cook off a bit 15min/100/slow speed mc off
Drain and pull apart as per the pork

  4. Just wanted to let you know how much I appreciate you having the ingredients and a lovely photo for your purchased recipes on your blog. I use ‘Copy Me That’ (similar to Paprika) for my meal planning and shopping. I own every one of your recipe books and am perfectly happy referring to them while cooking, but it is a huge time saver being able to copy the ingredients (and beautiful photo) directly from the blog into my shopping list and meal plan. With other recipe books I need to type out every ingredient and it is a huge disincentive to including the recipe in my meal planning.

    So my thanks not only for the fab recipes, but for being considerate of how different people will use them.

  5. Made this tonight along with soft flour tortillas and various sides and it was delicious! So tender and tasty! Made with chicken thigh fillets as that is what I had.. So yum!

  6. So delicious!! We left out the raisins but still tasted amazing. Used it for Taco Tuesday and my 5 year old says we should ALWAYS have this. We all had leftover sandwiches the next day. Yuuuuuum!! Thanks Nik 😊

    I altered due to intolerances but wow, its so great with the red rice.

  8. LOVED this!! So easy and we had it the first nice with soft flour tortillas (no time to make my own this time), second time with homemade rolls and some leftover Mex fillings and today for lunch in a roll. Solo and cold. There is still heaps left. Two adults…and if we have pizza tomorrow night, mine is having picadillo chicken on it. So yum.

  9. Made this and the whole family loved it ! We left out the olives as we are not fans, however it was still amazing,we had it with the guacamole, and the chipotle salsa, lettuce and sour cream, in wraps. Can think of so many other ways to use it too, definitely will be making this on a regular basis, thanks Nik ! <3
