One of my fond memories while travelling through Greece was tasting the Santorini Tomato Fritters. A specialty of Santorini, there is just something about these beautiful ripe tomato fritters that I love. I originally wanted to have these in SkinnyEntertaining, but decided to save them for this Mezze section as a share plate.
What you will need:
- baking powder
- dried dill tips
- dried mint leaves
- dried oregano leaves
- dried parsley
- eggs
- plain flour (gluten-free if required)
- red onion (or spring onions)
- salt
- tomato paste
- very ripe tomatoes – this recipe is really where the humble tomato shines!
Dried Herbs to Fresh Herbs
You can replace the dried herbs in this recipe with small handfuls of chopped fresh herbs. We’ve used dried to keep them budget-friendly.

Do I need a Thermomix® to make this?
No. The recipe includes both Thermomix® and traditional cooking methods. You will need a frypan to cook these fritters for both methods. You can either shallow fry for a lovely crispy end product or pan-fry with a little oil for a healthier version.
