This Confit Artisan Bread is a proud favourite of mine — rustic, flavour-packed and surprisingly forgiving to make. It uses a high hydration dough which gives it an open, airy texture (think sourdough vibes) plus a crisp crust that stays fresh longer than most home loaves. It’s not your everyday sandwich loaf — it’s artisanal, good-for-sharing, and pairs beautifully with soups, dips or a simple drizzle of olive oil.
I included it as a cookbook-exclusive recipe because I believe bread should be exciting again — simple ingredients, bold outcomes. The versions with olives or caramelised onions are especially divine (and fun to customise).

Do I need a Thermomix® to make this?
No. The recipe includes both Thermomix® and traditional stovetop methods including slow cooker and oven.
How long will it keep?
Stored in a paper bag or loosely in a cloth, it keeps well for 2–3 days. The crust will soften over time, but it remains delicious.
Can I freeze it?
Yes. Slice and freeze in portions. Rewarm slices in a hot oven to refresh the crust before serving.
Can I make it without olives or onion?
Of course. You can make a plain version or add your own flavour ins (herbs, roasted garlic, seeds) to make it your own.
What flour is best?
Bakers flour works well. The high hydration helps create that open crumb even with basic flour.
Can I make it Gluten Free?
Yes, we’ve had the most success with the Simply Wize Bread Mix and Well & Good Crusty Bread Mix – using half the amount of confit and salt.
