With the rising cost of groceries hopefully this what to plant garden guide might help out a little! The herbs listed below are great for any Thermomix user to keep in the garden.
Disclaimer: In no way do I have a green thumb (the only reason I have a garden that is alive is purely due to my boyfriend waters it), nor am I a plant expert who can tell you what to plant and when.
I can share a little bit of what I have planted in my garden here in Southeast Queensland that I’ve been able to use in the cookbook.
Below is the full list of fresh herbs, vegetables and some fruit – found on the shopping list for SkinnyMediterranean. I don’t have it all planted, but I do have the following:

Fresh Herbs
- basil – for Green Pesto, Caprese Salad, Pesto Chicken, Creamy Tomato White Bean Stew, One Pot Pasta Alla Norma
- dill – I keep some in the garden to make Dill Pickles but in the book it is used for the Maroulosalata (Greek Lettuce Salad, Spanakopita Frittata)
- mint – mint can easily take over, so be careful. We use it in the Watermelon & Mint Salad, Za’atar Bean Salad, Cauliflower Tabouli, Spiced Carrot Salad, Fattoush Salad, Spanakopita Frittata, Biftekia & Lemon Potato Bake
- parsley – We use a lot of parsley in this book!!
- rosemary – We use fresh rosemary in the One Pot White Bolognese
- Plus the usuals used to make Stock Concentrate (parsley, sage, thyme, rosemary)
