The ultimate Italian comfort food – tiny pasta cooked in a simple broth with butter, garlic, and Parmesan ie. Italian Penicillin.

Creamy, cosy, and on the table in minutes, it’s like a warm hug in a bowl. Keep it classic, or brighten it up with lemon and spinach for a fresh twist.

Apart from the pasta, the Chicken Stock Concentrate is one of the most important ingredients in this recipe. If you aren’t using my Stock Concentrate (why not?!) – make sure you taste and add more salt and Parmesan.

Pastina isn’t meant to be big flavours, it should be humble, comforting and perfect for when you are feeling under the weather or need a big hug. I would liken it to Congee and it is very popular with kids as it is quite a plain dish. 

You might like to serve it as a light meal, lunch or even as a side with some grilled chicken.

What pasta do I use?

Any tiny/small soup pasta is perfect for this recipe. Our testing team used all types of pasta including a pasta leftover from a Hen’s party (that I won’t be posting a picture of!!) and even some Paw Patrol pasta. 

Please don’t spend days or expensive postage hunting for the exact pasta (stelline) in the photo, any small pasta including risoni or macaroni will work. Simply cook a little longer if needed to cater for your pasta.

We found this small gluten-free pasta at the local IGA and it worked great for this recipe.

What you will need:

  • Parmesan cheese (or nutritional yeast for dairy-free)
  • garlic
  • butter (dairy-free if required)
  • water
  • Chicken Stock Concentrate
  • pastina pasta – or any small pasta like risoni, orzo or gluten-free macaroni
  • cracked black pepper
  • finely zested lemon
  • baby spinach (optional)To Serve
  • Parmesan cheese (or nutritional yeast for dairy-free)
