This Chicken Souvlaki Spinach Rice Bowl with Spicy Feta Dressing is one of my favourite all-rounders from SkinnyMediterranean. It’s bold, wholesome and full of Mediterranean heart — juicy souvlaki chicken, vibrant greens, hearty brown rice and a punchy, creamy spicy feta dressing.
 
I can’t believe this recipe nearly didn’t make it into SkinnyMediterranean! 
 
This Chicken Souvlaki Bowl with Spicy Feta Dressing came to me in a dream (everyone dreams about food right?)… BUT it was after recipe development was closed for the book. I messaged Sian and said it needed to be in the book… she said No.
I then proceeded to tell her about the juicy Souvlaki chicken with Spanakorizo & Tirokafteri sauce (Spinach Rice & Spicy Feta Dip)…
She replied with: “Ok. You just really want to eat it today right? Make it and let’s see what the testing team think…”
 
Long story short, the testing team loved it so it made it into the book last minute!! AND I got to eat it!
