I’ve been wanting to develop a Panna Cotta recipe for a number of years and I promise this perfectly balanced, not-too-sweet Panna Cotta was worth the wait! With added protein from Greek yoghurt, they also make a great breakfast option.
Panna cotta has a bit of a reputation for being “fancy restaurant food”… but honestly, it’s one of the easiest desserts you’ll ever make. If you can stir and pour, you can make panna cotta.
This version from SkinnyMediterranean is a little lighter than the traditional cream-heavy version. I use thick Greek yoghurt for a gentle tang that balances out the creaminess, so every spoonful tastes fresh and not too sweet. Top it off with a quick berry coulis that takes all of five minutes, and you’ve got a dessert that looks elegant but is completely fuss-free.
What you will need:
- Greek yoghurt – I prefer Jalna Greek Yoghurt
- caster sugar or maple syrup
- fresh lemon juice
- gelatine powder
- mixed berries
- sugar of choice
- thickened cream
- vanilla bean paste or vanilla extract
- lemon zest
Why you’ll love this panna cotta
- Ridiculously easy – no baking, no water baths. Just stir, pour, chill.
- Creamy but not heavy – yoghurt keeps it light, so you can easily eat one (or two).
- Make-ahead friendly – sets in the fridge overnight, so it’s ready when you are.
- Flexible – use whatever berries are cheap and in season, or grab frozen ones from the freezer.
- Thermomix® or stovetop – I’ve tested both methods, so no one misses out.
Tips for success
- Bloom the gelatine properly. Don’t skip it or you’ll end up with rubbery lumps.
- Taste your coulis before serving. Some berries are sweet, others can be lip-puckering tart. A teaspoon of extra sugar might save the day.
- For extra wow, serve in little glasses so you can show off the berry topping, or unmould onto plates for that proper “restaurant” look.

Can I make this ahead?
Yes – panna cotta is the queen of make-ahead desserts. Make it the night before and let the fridge do the work.
How long does it keep?
Up to 3 days in the fridge. Cover tightly so it doesn’t pick up any fridge smells.
Can I freeze panna cotta?
Technically yes, but it’s not ideal. The texture can turn grainy once thawed. It’s so quick to make, fresh is best.
Can I make it dairy free?
Yes. Swap the cream and yoghurt for coconut cream and a dairy-free yoghurt. The flavour will change (more tropical), but still delicious.
What berries work best?
Anything goes – strawberries, raspberries, blueberries, blackberries. Frozen berries are perfect because they break down fast and give you a lovely syrup.
What if I don’t want to unmould it?
No stress – just serve in little glasses or ramekins and spoon the coulis on top. Same great flavour, less drama.
