This Coconut & Lemongrass Margarita puts a tropical spin on the classic. Coconut tequila, fresh lime and orange liqueur are shaken with coconut water and our fragrant Lemongrass & Lime Leaf Simple Syrup.
It’s fresh and zesty with just enough coconut flavour, while the lemongrass and lime leaf give it a fragrant South-East Asian twist. Finish with a salt or toasted coconut rim depending on whether you like your margaritas more savoury or sweet.

How to Serve a Coconut & Lemongrass Margarita
For an optional rim, rub a lime wedge around half the edge of a chilled glass and dip into fine salt or finely chopped toasted coconut.
Strain the margarita over fresh ice, then garnish with a lime wheel and a short piece of bruised lemongrass.
Variations
Alcohol Free: Replace the coconut tequila with soda water and the Cointreau with fresh orange juice.
Super Skinny: Replace the coconut water with sparkling water.
Paleo: Use plain tequila and replace the Cointreau with fresh orange juice.
Frozen: Reduce the alcohol if needed, pour into icy pole moulds and freeze for an adults-only frozen treat.
Low FODMAP: Replace half the coconut water with sparkling water.
Halved/Doubled: This recipe can be doubled. When using the conventional method, make two separate batches for the best result.

FAQs
Can I make this margarita without coconut tequila?
Yes. Use a good-quality blanco tequila instead. The coconut flavour will be lighter, but you’ll still get some coconut from the coconut water. You can adjust the coconut flavour to taste if needed.
Should I use salt or toasted coconut on the rim?
Both work well. Salt gives you more of the sweet, sour and salty balance of a traditional margarita, while toasted coconut makes the drink sweeter and more tropical. You can also rim half the glass so each sip is different.
