Silky Sweet Potato Mash

I am of the school of thought that not everything served on the table HAS to be made in the Thermomix… especially with the warmer weather headed our way, you will often find me whipping up a salad or a mash to go with a quick BBQ for dinner.

I happen to think this is the best sweet potato mash Thermomix recipe around, and we have it any time I am craving something a bit carby/naughty: because on the scale of 0-deep fried Oreo, mashed sweet potato really isn’t that bad.

Ingredients

  • 600 g sweet potato - peeled, cubed small
  • 30 g butter
  • 30 g cream
  • 1 tsp salt
  • 1/8 tsp cracked black pepper

Instructions

  • Add 500 g or 17.6 oz water to mixer bowl and put sweet potato into simmering basket. Insert into mixer bowl and cook for 17 min/steaming temp/speed 2/MC on.
  • When sweet potato is cooked, remove from mixer bowl and set aside. Drain water.
  • Add butter to mixer bowl and melt for 2 min/50°C or 120°F/speed 2/MC on.
  • Put sweet potato back in to mixer bowl, mash for 10 sec/speed 5/ MC on.
  • Insert butterfly and put cream, salt and pepper into mixer bowl. Whip for 30 sec/speed 4/MC on.

Bellini Users
Use sharp blade for this recipe.
At step 1 use 120°C or 250°F if using a Supercook.

  1. My kids are super fussy… I’m looking for a regular potato mash that will satisfy the needs of the masses (I have 5 kids)
    If I was to use regular white potatoes in this recipe what,if anything, would I need to change?

    1. This recipe isn’t suitable for white potato. Try one of our potato mash recipes. The starches are different and white potato can turn into glue if over mixed.

    1. You wont fit double potatoes in the basket – you can steam in the varoma instead and then whip in batches.

    This recipe is so simple and yet yeilds a wonderful mash potato side dish. I will be making double next time as everyone asked for seconds!!

  4. I did 300g instead of the 600g, I’m confused about how to even fit 600g in the simmering basket? Also at 15mins it was almost overflowing but not finished cooking.

    1. Do you think your scales could of been out and it was actually more than 300g? I just did it with 800g and cooked it for 22min and it worked fine, was a tight fit in the basket but still fitted in.

    Do I need to adjust the cooking timings if were to half the quantity of the ingredients?
