This Fattoush Salad is everything I love about Middle Eastern food: bold, fresh flavours and plenty of crunch. It’s a classic Levantine dish made with crisp lettuce, cucumber, tomato, radish and herbs, all tossed with crunchy toasted pita and a tangy sumac dressing.
The toasted bread is what makes fattoush special. It soaks up a little of the dressing but stays crunchy enough to give you that satisfying bite. The dressing is light but punchy – olive oil, lemon, garlic, Pomegranate Molasses and Za’atar Spice Mix – which ties everything together and makes you want to keep going back for more.
This salad is brilliant on its own for lunch, or as a side to grilled meats, falafel, or part of a mezze spread. It’s healthy, vibrant and comes together quickly with ingredients you probably already have.

What is fattoush?
A Middle Eastern salad made with crisp vegetables, fresh herbs, and toasted flatbread, tossed in a lemon-sumac dressing.
Can I make it ahead?
Prep the veg and dressing in advance, but toss everything together just before serving so the bread stays crunchy.
Do I need sumac?
Sumac gives fattoush its signature tangy flavour. If you don’t have it, add a little extra lemon juice, but it won’t be quite the same.
Can I use other bread?
Yes. Lebanese flatbread or even day-old tortillas work well if you don’t have pita.
How long does it keep?
Best eaten fresh, but leftovers can be stored for a day. The bread will soften but still taste great.
