My Pita Wraps have been a favourite for years, but I’ve always wanted proper puffy pockets. With a bit of extra proofing and a few tweaks, these pita puff up beautifully – I was thrilled when the first one came out of the air fryer.
What you will need:
- bakers flour or bread flour (for Gluten Free See Below!)
- instant yeast
- olive oil
- salt
- sugar or honey
- water

Gluten-Free Puffy Pita Pockets
Option 1 – Simply Wize Crusty Bread Mix (1 box)
As per the recipe and variation in SkinnyMediterranean but using –
- 1 box of Simply Wize Crusty Bread Mix (Gluten free)
- 240 g water
- Halved salt
- All other ingredients and instructions the same.
Option 2 – Gluten Free Plain Flour, Tapioca & xanthan gum.
As per the recipe in SkinnyMediterranean but using –
- Before starting – mix together 300 g White Wings Gluten-free flour, 100 g tapioca flour and 5 g xanthan gum.
- 270 g water (not 240 g)
- All other ingredients and instructions as per recipe.
Rolling out & resting

- Divide into balls and roll out. Place on baking paper, cover with a tea towel & rest. (see recipe in SkinnyMediterranean for full details)
Cooking in the Ovana
- These were perfection!! 80-90 sec in the ovana at 370 degrees
