While visiting Barcelona I was treated to a beautiful evening of cooking and eating with the Just Royal BCN cooking class. It was such a treat to learn about the complete Spanish food history, explore the tasting tour then learn to make Paella. This easy baked Paella doesn’t need to be saved for a special occasion, it is simple enough for a weeknight dinner too!
This Prawn & Chorizo Paella Bake is my shortcut way of enjoying all the flavour of a traditional Spanish paella, without standing over the stove. Everything bakes together in the oven — smoky chorizo, juicy prawns, spiced rice — so the rice soaks up all those incredible flavours while you get on with other things.
It’s a dish that looks and feels special, but is simple enough for weeknights. The oven does most of the work, leaving you with golden baked rice and tender prawns nestled through. It’s perfect for feeding a family, but it also doubles as a dish you’d happily serve to friends with a crisp salad and a glass of wine.

What rice should I use?
Arborio or paella rice (like bomba) works best. They absorb flavour while staying firm.
