Sharing is caring!

Skinnymixer’s Za’atar Bean Salad features in the Sides & Salads section of the cookbook SkinnyMediterranean. Za’atar Bean Salad: a fresh, herby salad of beans, tomato, cucumber and feta with a zesty za’atar dressing. Quick, colourful, and full of crunch.

The Za’atar Bean Salad is a cookbook exclusive recipe…

I should be telling you that this nutrient dense bean salad is amazing to have ready in the fridge for lunches and high in fibre to keep you fuller for longer. To be honest, I just really love eating fresh Mediterranean style salads like this!

This Za’atar Bean Salad is one of those throw-together dishes that surprises you with how much flavour it packs. A tin of beans, some fresh vegetables, a good drizzle of olive oil and lemon, and a sprinkle of za’atar — suddenly you’ve got a vibrant Middle Eastern–inspired salad that feels anything but boring.

What makes this salad pop is the Za’atar Spice Mix. The earthy sesame and thyme notes with that tangy hit of sumac make the simplest ingredients sing. Add in crumbled feta for creaminess, cucumber for crunch, and plenty of herbs for freshness, and you’ve got a salad that works as a main, side, or part of a mezze spread.

It’s quick, healthy, and keeps well in the fridge, which makes it perfect for meal prep or a last-minute addition to the dinner table.

Serve with Doner Kebab Meat, Slow Roasted Pomegranate Molasses Lamb, with some simple grilled fish or meat or at your next BBQ.

FAQs

What beans work best?
A four-bean mix works perfectly, but you can use chickpeas, cannellini, or kidney beans — whatever you’ve got in the pantry.

Can I make it dairy free?
Yes. Just leave out the feta or replace it with a dairy-free alternative.

How long does it keep?
Up to 2–3 days in the fridge. The flavours actually develop and get better.

Do I need za’atar?
It’s what makes this salad special. If you don’t have it, you can use dried oregano with sesame seeds and a pinch of sumac as a quick substitute.
