What beans work best?
A four-bean mix works perfectly, but you can use chickpeas, cannellini, or kidney beans — whatever you’ve got in the pantry.
Can I make it dairy free?
Yes. Just leave out the feta or replace it with a dairy-free alternative.

Up to 2–3 days in the fridge. The flavours actually develop and get better.
Do I need za’atar?
It’s what makes this salad special. If you don’t have it, you can use dried oregano with sesame seeds and a pinch of sumac as a quick substitute.
