White Chicken Chili ๐Ÿคฉ  was the recipe I was most excited to develop for the new cookbook ‘The Healthy Mix Dinners 2’!

Imagine a delicious thick chicken chowder, packed with Mexican flavours. Is it spicy? Not at all, but you can increase the chillies if you wish.

You can serve it by itself in a bowl with some corn chips, sour cream and avocado on top or I love to pair it with the Green Rice and Cowboy Caviar in the Sides section of the cookbook.

It makes quite a bit of food, but freezes perfectly. It also makes incredible pies, nachos and a topping for jacket potatoes.

Hopefully this Thermomix & regular cooking methods cookbook helps takes a little bit of stress out of dinner time and help answer the question โ€œWhatโ€™s for dinner?โ€ ๐Ÿฅฐ
