This is a hearty salad, that even the manliest salad hater will love.

It’s perfect to feed a crowd, I was able to feed my family of 4 and have more than half left over – you can make it go even further with extra salad stuff and dressing too. The beauty of this recipe is you can either prepare it ahead of time and enjoy it cold, or cook it and eat it warm. I hope you love it 🙂

Red Pesto Chicken Salad

Ingredients

  • 50 g portion of red pesto
  • 500-700 g chicken breast - cubed
  • 500 g baby red potato - sliced into thick round coins

Dressing Ingredients

  • 100 g red pesto
  • 30 g greek yoghurt - or home made mayonnaise for dairy free
  • 10 g balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp salt

To serve

  • baby spinach
  • chopped macadamia nuts

Instructions

  • Add dressing ingredients to mixer bowl, combine for 10 sec/speed 2/MC on. Set aside.
  • Put your prepared potatoes into the simmering basket and coat the chopped chicken breast in the 50 g or 1.8 oz red pesto and put into the deep steaming tray.
  • Without washing the bowl, add 500 g or 17.6 oz water to mixer bowl, insert simmering basket, put the steaming tray in place and cook for 17-20 min/steaming temp/speed 3 or until cooked. Stir chicken part way through to ensure even cooking.
  • Set potatoes aside to cool and tip out steaming water. Put chicken into the mixer bowl and roughly chop for 1-2 sec/speed 5/MC on.
  • At this point you can either allow your potato and chicken to cool completely before combining with dressing and salad items, or combine it warm for a warm salad.

Please note: This recipe will last a maximum of 3 days in the fridge due to raw garlic and the risk of botulism.

At step 3, if using an Intelli pop a tea towel over the steamer, use ST temp and extend cooking time if required. If using a Supercook, use 120-130 degrees.

  2. Thank you for this post. I’ve always believed that chicken had to be cooked to 180 using an instant read thermometer to be safe. Always dry. I do more grilling outdoors, but I’ll definitely have to look for one of those pans. Should be good for any type of meat.

  5. So delicious I could have licked the bowl clean! Plenty of red pesto left over to freeze and use for other dishes.
    I didn’t shred the chicken, I just left it diced and it was perfect. Served it cold with cos lettuce and cherry tomatoes. Will be a monthly dish in our household now and the pesto was to die for on plain crackers too!
    By the way, I used chicken thigh fillets not breast.

  7. Hi, this is a silly question but I just wanted to check I was reading it right – this recipe has total 150g red pesto in it? 50g for the first part and 100g for the dressing?

  9. This is absolutely delicious! The pesto is so lovely and versatile! Definitely one of those recipes that you’ll make so often that you will know it off by heart.

  10. We found this salad super delicious, more so than I imagined. I used 700gm chicken thigh but it needed longer to cook than the recommended time.

  11. We don’t eat carbs and so potato is no go. What would be good to use in it place or you’d you leave it out and serve with grilled veg on side?

  14. Loved this recipe.. only had sweet potato which was yummy addition and had to play around with a few ingredients based on what was in the cupboard.. we ate it warm. I had seconds cold (preferred it warm) . Husband not so fussed but he will be eating it again.. I only used halt the chicken and froze the rest which I have used to make a very yummy chicken pasta bake which Mr Fussy has confessed well I have never been a fan of pasta bakes but this is unreal.. – red pesto chicken, spinach, pea and pasta in a very light bechamal sauce.

  19. I made this last night and, as expected, it was delicious. My husband kept saying how good it was and we finished it off for lunch today. I have frozen most of the leftover pesto in 150g lots in snap lock bags so I’m ready for the next batch of dinners and I’m using the rest as a dip with crackers, etc at a bbq tomorrow. So versatile!     I had been to the shop at lunch and purchased the missing items only to arrive home late and decide I didnt have enough time. Decide to make the pesto in prep for tomorrow night and end up with the salad in minimal time with minimal effort. Top Pick for me!

    We made our own Tomato Paste and semi-dried tomatoes.

  40. Fantastic, just so delicious. I didn’t have any yoghurt, I tried to make my own mayonnaise but failed (learn to read already lol) so ended up using aioli. I was really impressed with the results of this salad. My husband NEVER eats all his salad greens, he cleaned the plate, amazing I tell you lol This is most definitely a new summer salad in our home.   45. Seriously yummy. I made a little less as only feeding 2.5 but wish if made more, could wary this every day this week. Couldn’t get red skinned potatoes but washed ones worked a treat and added a little blanched broccoli with spinach. Thank you Nik

  48. With the semi dried tomatoes? Did everyone use a food dehydrator? i bought the deli ones and found it was overpowering and didnt taste that good :(:(

  49. Made this tonight for dinner. After my husband advised he didn’t like semi dried tomatoes (which I already knew) and was worried that a salad would not be enough for dinner, I think he was pleasantly surprised. Bowls clean by everyone! Even my 2 year old. Can’t wait for lunch tomorrow!

  54. I made this on the back of all the rave reviews on the Facebook group, and boy was I NOT disappointed. I used cashews and added basil leaves with the spinach at the end – next time I’ll also add some sundried tomato strips for added oomph. We loved it as a light summer tea and will definitely be making it again soon!

    I converted to LCHF by subbing steamed green beans and asparagus with champignon mushrooms for the potatoes. Served warm with cashews.

  66. This salad was incredibly tasty! My husband and I will be very quick to make it again. I love that there is enough pesto for two quantities. I cooked the chicken for the full 20 minutes and chopped for only 1sec to avoid shredding. It worked brilliantly.

  81. This was really yummy and good serve sizes. Had it as our meal (for lunch and tea and luch again!). Next time will cut the potatoes into cubes and serve it as a side dish to bbq. Also another serve of pesto left so might mix it with yoghurt and serve as a sauce with grilled chicken/veg

  83. Perfect dish for the summer months. The kids devoured this after a long afternoon swimming. What I like best is that the pesto recipe that is added to this dish made a decent amount. I have frozen the left overs of it into portions ready to make the Red Pesto Chicken Salad again. Very yummy.
