Skinnymixer’s Very Berry Cheesecake features in the cookbook SkinnyEntertaining.

When I developed this recipe for SkinnyEntertaining my mum & dad were visiting, and with the help of my daughter Lani … they successfully ate nearly the entire Very Berry Cheesecake 🤣 It was then I realised, I think we will see a few of these on Christmas tables this year 😍

  • raw cashews
  • butter or coconut oil
  • sweetener of choice
  • desiccated coconut
  • cacao powder
  • cream cheese
  • Greek yoghurt or light coconut cream
  • gelatine powder
  • frozen mixed berries

    I had a celiac guest on Christmas Day so made this cheesecake, it was adored by everyone! I had the leftovers for dinner that night!
    It took 90+ mins for the jelly mixture to cool to add to the cheesecake so just take that into account when making it, leave enough time for that step as there isn’t much you can do to hurry it along.
